The importance of the antioxidants contained in foods is well recognized both for preserving the foods themselves and for supplying essential antioxidants in vivo. Among these, the melanoidins formed during food processing and storage represent a significant part of our diet, with an average intake of several grams per day. Melanoidins exhibit antioxidant properties in vitro through their protective effect against reactive oxygen species. Review: Solution equilibria of ternary complexes formed from copper(II), aliphatic amines, and bioligands

This review provides a summary of the coordination chemistry of ligands in the ternary system: copper(II)–aliphatic amine–bioligand, where amine = ethylenediamine – En, diethylenetriamine – Dien, or N, N, N′, N″, N″-pentamethyldiethylenetriamine – Me5dien, and bioligand = selected amino acid, aminohydroxamic acid, or aminophosphonic acid, in aqueous solution. We would like to show the specific interactions of copper(II) in ternary systems in the context of complex equilibria chemistry.

Polyunsaturated fatty acids play an important part in the structure and function of cellular membranes and are precursors of lipid mediators which play a key role in cardiovascular and inflammatory diseases. Dietary sources of essential fatty acids are vegetable oils for either linoleic or alpha-linolenic acids, and sea fish oils for eicosapentaenoic and docosahexaenoic acids. Unsaturated fatty acid bioavailability in growing rats fed low or adequate protein diets with sunflower or soybean oils

Abstract The relationship of serum very low density lipoproteins (VLDL) to hepatic lipid composition was studied after 28 days of protein depletion to determine the interactions between dietary protein levels and the essential fatty acid (EFA) availability. This was examined in rats using a dietary combination of 20% or 2% casein with 5% vegetable oils, variable in their n-6:n-3 fatty acid ratios. On the problematic nature of vitamin E requirements: net vitamin E

The requirement for vitamin E is closely related to the dietary intake of polyunsaturated fatty acids (PUFA). By the protective mechanism to prevent PUFA from being peroxidized, vitamin E is metabolically consumed. In addition, PUFA impair the intestinal absorption of vitamin E. Therefore PUFA generate an additional vitamin E requirement on the order of 0.6, 0.9, 1.2, 1.5, and 1.8 mg vitamin E (RRR-alpha-tocopherol-equivalents), respectively, for 1 g of dienoic, trienoic, tetraenoic, pentaenoic, and hexaenoic acid. Dietary polyunsaturated fatty acids (PUFA) play a key role in regulating delta-6 desaturase (D6D), the key enzyme for long-chain PUFA biosynthesis. Nevertheless, the extent of their effects on this enzyme remains controversial and difficult to assess. It has been generally admitted that C18 unsaturated fatty acids (UFAs) regulate negatively delta-6 desaturase (D6D). Changes in cell wall pectin and pectinase activity in apple and tomato fruits duringPenicillium expansum infection

Cell wall pectin degradation in apple and tomato fruit during infection by Penicillium expansum was investigated. In infected apple fruit, a significant decrease in the average molecular mass was observed in pectins extracted with CDTA and also in pectins extracted with Na2CO3. In tomato fruits, depolymerisation was also observed in both pectic fractions during infection, the major change being in the pectins extracted with Na2CO3. An apparatus is presented for the precise measurement of vapour pressures. It is tested with diethyl ether and applied to the system tert-butyle acetate/polystyrene (weight-average molecular weight Mw = 110000) up to polymer concentrations of ca. 60 wt.-% in the temperature range from 10 to 90°C; by means of the Redlich-Kister equation the results can well be described analytically. The data are evaluated to yield the Flory-Huggins parameter in the subsequent article in conjunction with other experimental information.

Cross-over study on effects of Mediterranean diet in two randomly selected population samples

Abstract Two randomly selected population samples in Western Sicily, one rural (n = 40) and one urban (n = 40), were studied to evaluate the impact of dietary intervention on lipid, coagulative and fibrinolytic parameters. The two groups received the diets in a cross-over design with the following sequences: (a) baseline period; (b) 8-week dietary intervention period; (c) 8-week return to the original diet.
