Salivary properties involved in astringency sensitivity in human differ as a function of age

Astringency is an important sensory characteristic of foods and beverages containing polyphenols. However, astringency perception in elderly people is not documented. Current hypothesis on astringency mechanism involved aggregation of the mucosal pellicle by tannins and its protective role by salivary proteins in particular proline rich-proteins (PRPs). Elder Abuse in Live-in Migrant Carer Arrangements

This chapter focuses on an issue rarely addressed in research: abuse and protection against abuse in live-in migrant carer (LIMC) arrangements. Based on a secondary analysis of data collected in LIMC arrangements in Germany, potential risks of abuse and protective factors against abuse are identified. The chapter shows that questions about abuse and protection against abuse in these arrangements have to be analyzed in the context of complex, interrelated factors, structures and processes. There is no clear answer as to whether LIMC arrangements increase or decrease the risk of abuse and neglect of older dependent people. APOE and longevity: study of a population of Sardinian Centenarians

Apolipoprotein E is a major determinant in lipoprotein metabolism and cardiovascular disease, it has emerged as an important molecule in several biological processes including Alzheimer's disease and cognitive function. ApoE is a polymorphic protein (ε2, ε3, ε4) with three proteic isoforms, ApoE2, ApoE3, ApoE4 (1). The aim of the study was to verify the frequencies of allelic variants a population of healthy elderly people. ApoE polymorphisms were determined by Real Time-PCR. The genotype frequencies of ApoE in our group of 71 centenarians (mean age 100.9 ±1.3) were: ε2/ε3 (12.67%); ε3/ε4 (5.63%).
