Pleurotus eryngii (DC.) Quél. powder was used in bread production. Three dough trials (0, 5 and 10% of mushroom) were obtained with commercial baker's yeast. P. eryngii powder was first tested against several yeast species; 10% P. eryngii trial was characterised by the highest pH and total titratable acidity. P. eryngii did not influence negatively the fermentation process, since all trials reached yeast levels of 10 8 CFU g −1 . Mushroom powder decreased bread height and softness, increased crust redness and crumb void fraction and cell density and, although the breads were scored diverse, the overall assessment was comparable. The Use of Winery by-Products to Enhance the Functional Aspects of the Fresh Ovine “Primosale” Cheese

Fresh ovine “primosale” cheese was processed with the addition of grape pomace powder (GPP). Cheese making was performed using pasteurized ewes’ milk and four selected Lactococcus lactis strains (Mise36, Mise94, Mise169 and Mise190) inoculated individually. For each strain the control cheese (CCP) was not added with GPP, while the experimental cheese (ECP) was enriched with 1% (w/w) GPP. GPP did not influence the starter development that reached levels of 109 CFU/g in all final cheeses. Local consumers are the first line to control biological invasions: a case of study with the whelk Stramonita haemastoma (Gastropoda: Muricidae)

The increasing spread of invasive species in the Mediterranean Sea determines several alterations in local food webs, changing the feeding habits of native organisms. The whelk Stramonita haemastoma is a widespread Mediterranean gastropod that consumes bivalves, barnacles and limpets. Previous studies showed a shift in its diet from the bivalve Mytilaster minimus to the invasive mussel Brachidontes pharaonis, presumably due to a higher energy gain. Morphological traits predict host-tree specialization in wood-inhabiting fungal communities

Tree species is one of the most important determinants of wood-inhabiting fungal community composition, yet its relationship with fungal reproductive and dispersal traits remains poorly understood. We studied fungal communities (total of 657 species) inhabiting broadleaved and coniferous dead wood (total of 192 logs) in 12 semi-natural boreal forests. We utilized a trait-based hierarchical joint species distribution model to examine how the relationship between dead wood quality and species occurrence correlates with reproductive and dispersal morphological traits. The deep-sea holasteroid Calymne relicta was first described from a few fragments discovered by the HMS ‘Challenger’ in the Bermuda abyssal plain more than a century ago. In addition to re-examining the type material, we describe herein new specimens from unpublished material collected between 3720 and 4860 m during three scientific expeditions that took place on both sides of the North Atlantic between 1966 and 1991. The new material includes juvenile and adult specimens in sufficiently good preservational state to allow a full redescription, including all types of appendages, some of which have never been described. Characterization of kefir-like beverages produced from vegetable juices

The aim of this work was to develop new non-dairy fermented beverages using vegetable juices as fermentable substrates. Carrot, fennel, melon, onion, tomato and strawberry juices underwent back-slopping fermentations, carried out by water kefir microorganisms. Results indicated that lactic acid bacteria and yeasts were capable of growing in the juices tested. Melon juice registered the highest numbers of microorganisms. Almost all juices underwent a lactic fermentation. After fermentation, there was observance of a decrease of the soluble solid content and an increase of the number of volatile organic compounds.
