Liking for fat is associated with sociodemographic, psychological, lifestyle and health characteristics
2014
Sensory liking influences dietary behaviour, but little is known about specifically associated individual profiles. The aim of the present study was to investigate the associations between liking for fat-and-salt and fat-and-sweet sensations and sociodemographic, economic, psychological, lifestyle and health characteristics in a large sample. Individual characteristics and liking scores were collected by a questionnaire among 37 181 French adults. Liking scores were constructed using a validated preference questionnaire. Multinomial logistic regression models were used to assess the associations between liking levels and individual characteristics. In both sexes, subjects belonging to low-l…
The impact of some behavioral aspects on periodontal disease in a group of Romanian students - an epidemiological survey.
2014
Abstract Aims To investigate the prevalence of periodontitis in a young population representative for the North-western part of Romania (Transylvania) and to identify possible risk indicators of periodontitis. Methods The study is a cross-sectional epidemiological survey. The subjects were students randomly sampled from three universities in Cluj-Napoca and high school students from the neighboring city of Bistrita. The sample size of the population was calculated. Overall, 623 subjects aged 16–35 years were evaluated, of which 488 were university students and 135 high school students. A structured questionnaire was administrated to collect information on socio-behavioral status and oral hy…
Learning to Eat Vegetables in Early Life: The Role of Timing, Age and Individual Eating Traits
2014
Vegetable intake is generally low among children, who appear to be especially fussy during the pre-school years. Repeated exposure is known to enhance intake of a novel vegetable in early life but individual differences in response to familiarisation have emerged from recent studies. In order to understand the factors which predict different responses to repeated exposure, data from the same experiment conducted in three groups of children from three countries (n = 332) aged 4-38 m (18.9 +/- 9.9 m) were combined and modelled. During the intervention period each child was given between 5 and 10 exposures to a novel vegetable (artichoke puree) in one of three versions (basic, sweet or added e…

Moringa oleifera supplemented foods in South Africa : A multidisciplinary approach combining consumer studies with physico-chemical and nutritional a…
2021
Malnutrition is a major challenge in South Africa (SA), particularly in Eastern Cape and Limpopo provinces, which are predominantly black and historically disadvantaged. This thesis aims to assess the potential of Moringa oleifera (MO) as a source of nutritional improvement in the diets of mothers and their children in these provinces. Known for its nutritional benefits, MO is a plant native to India, now cultivated in SA but not widely used for human nutrition. A two-part approach was followed in this thesis. The first part aims to understand how MO is perceived by consumers and how it can be integrated into the South African food repertory. A study of the knowledge, beliefs and consumptio…
