Color of orange juice treated by High Intensity Pulsed Electric Fields during refrigerated storage and comparison with pasteurized juice
2008
Abstract High Intensity Pulsed Electric Field (HIPEF) is one of the nonthermal minimal processing technologies interesting for scientists and food industry as a new, alternative (preservation) process for liquid food. We have evaluated the effect on color, browning and hydroxymethylfurfural (HMF) of a pasteurized orange juice and the same orange juice treated by HIPEF, during 7 weeks stored in refrigeration at 2 °C and 10 °C. Pasteurized orange juice presents greater yellow tendency ( b ∗ ) and less red tendency ( a ∗ ) than the untreated orange juice, while HIPEF orange juice presents a coloration more similar to the untreated orange juice. Color variations (Δ E ) during storage are greate…
Chemical transformations of glucose in solutions for peritoneal dialysis after sterilization and during storage
2018
The objective of this work was to estimate glucose degradation products (GDPs) in solutions for peritoneal dialysis (PD) including glucose and sodium lactate based on the change of pH and absorption of ultraviolet (UV) light. Spectrophotometric and pH-metric methods were used to measure glucose degradation and transformation of GDPs in laboratory-made solutions after heat sterilization and during storage. Mechanism of transformations of GDPs in the sterilized solutions for PD during storage and spectral characteristic of 5-HMF were studied. Common features for all the batches of the tested solutions for PD after heat sterilization were a reduce in pH, increase in the absorbance in the range…

From the Beehives: Identification and Comparison of Physicochemical Properties of Algerian Honey
2021
In this study, the authors aimed at characterizing 11 Algerian kinds of honey taken from various geographical locations (beehives located at Djelfa (Medjbara and Dzaira), Laghouat, Aflou, Medea, Tiaret, Sidi bel-Abbes, Tiaret, Ain-Safra, Mostaganem, El Bayadh, and Ghardïa). The authors investigated the physicochemical parameters of these honey samples, including density, water content, electrical conductivity, ash content, pH, hydroxymethylfurfural (HMF) content, free acidity, and color. The physicochemical parameters obtained were found to be within acceptable ranges according to the international standards (Codex Alimentarius) for 9 out of 11 analyzed samples: density 1.38–1.50 g/cm3 (the…
Fatty acid profile changes during orange juice‐milk beverage processing by high‐pulsed electric field
2007
High-intensity pulsed electric fields (HIPEF) is an emerging non-thermal food preservation technology which has the potential to pasteurize pumpable liquid foods. Its application is being studied to evaluate it as potential alternative or complementary process to thermal pasteurization. Orange juice-milk beverage with added bioactive components is a ready-to-drink beverage developed as an alternative to traditional soft drinks. In the present work, two HIPEF treatments (35 and 40 kV/cm) and six different treatment times (from 40 to 180 µs) were evaluated to assess their effect on the fatty acid profile of an orange juice-milk beverage fortified with n-3 fatty acids and oleic acid. The effec…
Effect of pulsed electric field on Maillard reaction and hydroxymethylfurfural production
2020
Abstract As an emerging nonthermal processing technology, the application of pulsed electric field (PEF) has received increasing attention not only for its capability to inactivate enzymes and microorganisms or to enhance mass transfer during the extraction process but also for its potential to inhibit the formation of chemical contaminants during processing, such as the formation of hydroxymethylfurfural (HMF). HMF is a potential carcinogen to humans that can be produced via the Maillard reaction (MR). Compared with thermal treatment, PEF can minimize the extent of MR, reducing the contents of HMF. However, in some cases, MR and HMR may be promoted, closely associated with PEF conditions a…
Spectral characteristics of 5-hydroxymethylfurfural as a related substance in medicinal products containing glucose
2019
Objectives: To study 5-hydroxymethylfurfural (5-HMF) spectral characteristics aiming at their future application in analytical procedures and their validation for the determination of 5-HMF in liquid products containing glucose after sterilization.Method: Direct spectrophotometric method for the determination of 5-HMF using the molar absorption coefficient at the absorption maximum (284 nm). Results and discussion: aqueous 5-HMF solutions have strong absorption in the ultraviolet range below 310 nm and give two absorption maxima at wavelengths of 229–230 nm and 284 nm. An excellent linear relationship between absorbance and 5-HMF concentration was observed in the concentration range of 2.0–1…
Complex technological and biological research of solutions for peritoneal dialysis
2018
Objective : The purpose of our work was to conduct technological, analytical, and biological investigations and stability studies of peritoneal dialysis (PD) solutions containing glucose and sodium lactate in single-chamber containers. Methods : Different formulations of PD solutions were prepared and sterilized at a temperature of 121 °C during 15 m. UV-spectrophotometric determination was performed using purified water as a blank. The spectra of the solutions were run in the range of 220 to 400 nm for the identification of an absorption maximum (λ max ) and measuring the absorbance at 228-230 nm and λ max before and after heat sterilization. λ max of the most PD solutions after sterilizat…
Task-Specific Organic Salts and Ionic Liquids Binary Mixtures: A Combination to Obtain 5-Hydroxymethylfurfural From Carbohydrates
2019
The increase in energy demand and depletion of fossil fuels are among major issues of modern society. Valorization and transformation of raw materials in products of industrial value represents a challenge. This justifies the growing interest of scientific research towards the identification of suitable media and methodologies able to pursue above goals, paying attention to matter of sustainability. On this subject, we studied sulfonic-acid functionalized diimidazolium salts as catalysts for the conversion of fructose and sucrose to 5-hydroxymethylfurfural (5-HMF) in an ionic liquid mixture. In general, using these salts allowed us to obtain 5-HMF in good yields from both substrates in mild…
