Experimental and theoretical NMR and IR studies of the side-chain orientation effects on the backbone conformation of dehydrophenylalanine residue

Conformation of N-acetyl-(E)-dehydrophenylalanine N', N'-dimethylamide (Ac-(E)-ΔPhe-NMe(2)) in solution, a member of (E)-α, β-dehydroamino acids, was studied by NMR and infrared spectroscopy and the results were compared with those obtained for (Z) isomer. To support the spectroscopic interpretation, the Φ, Ψ potential energy surfaces were calculated at the MP2/6-31 + G(d,p) level of theory in chloroform solution modeled by the self-consistent reaction field-polarizable continuum model method. All minima were fully optimized by the MP2 method and their relative stabilities were analyzed in terms of π-conjugation, internal H-bonds and dipole interactions between carbonyl groups. The metathetical reactions of a) [Li(tmeda)](2)[(S)C(PPh(2)S)(2)] (Li(2)·3c) with CuCl(2) and b) [Li(tmeda)](2)[(SPh(2)P)(2)CSSC(PPh(2)S)(2)] (Li(2)·4c) with two equivalents of CuCl both afford the binuclear Cu(I) complex {Cu(2)[(SPh(2)P)(2)CSSC(PPh(2)S)(2)]} (5c). The elongated (C)S-S(C) bond (ca. 2.54 and 2.72 A) of the dianionic ligand observed in the solid-state structure of 5c indicate the presence of diradical character as supported by theoretical analyses. International audience; Free radical theory of aging hypothesizes that oxygen-derived radicals are responsible for the storage-related flavor instability in wine. In an optimal situation, a balanced-distribution exists between oxidants and antioxidants among wines intrinsic/extrinsic metabolites. Based on the kinetic study of POBN-1-hydroxyethyl spin adduct (POBN-1-HER) formation in wines initiated via the Fenton reaction, a novel tool based on EPR spin trapping methodology was developed to quantify wines resistance against oxidation. Evaluation of the original dose in irradiated dried fruit by EPR spectroscopy

Abstract The electron paramagnetic resonance spectroscopy (EPR) is one of the physical methods, recommended by the European Committee for Standardization, for the identification of irradiated food containing cellulose, such as dried fruit. In this work the applicability of EPR as identification method of irradiated pistachios, hazelnuts, peanuts, chestnuts, pumpkin seeds is evaluated; the time stability of the radiation induced signal is studied and the single aliquot additive dose method is used to evaluate the dose in the product.

1H nmr chemical shifts of [14]annulenes and their dianion salts

Abstract The bridged (14]annulene 2 was reduced into its dianion and the structure of the dianion salt was proven by chemical and spectroscopic means. The 1H NMR spectroscopic properties of 2 are similar to those of the structurally related bridged [14]annulene 1 , whereas the corresponding dianions 2 2- and 1 2- are strikingly different. The geometries of 1 and 2 and their dianions were studied by means of a modified π-SCF force field approach. Almost planar perimeters without significant bond length alternation are obtained for the neutral annulenes 1 and 2 , whereas their dianions are characterized by structures with reduced symmetry.
