Development of new non-dairy beverages from Mediterranean fruit juices fermented with water kefir microorganisms

The aim of this work was to explore the use of several Mediterranean fruit juices as fermentable substrates to develop new non-dairy fermented beverages. Microbiological, chemical and sensory features of kefir-like beverages obtained after the fermentation of juices extracted from fruits cultivated in Sicily (southern Italy) with water kefir microorganisms were investigated. Results indicated that both lactic acid bacteria and yeasts were able to develop in the fruit juices tested, but the highest levels were registered with prickly pear fruit juice. A Biochemical Genetic Study of Isoenzyme Polymorphism within and between Two Populations of Atherina Boyeri Risso

Allozymic variation of 20 loci was investigated in two samples of Atherina boyeri collected in the Mediterranean Sea from the coast of Trappeto and Marsala Lagoon (Sicily, Italy). Five loci were polymorphic (PGM*, EST-1,2*, SOD-2*, PGI-2*) and appeared to be in Hardy-Weinberg equilibrium. A significant Fst mean value (0.02) (G = 23.77, P < 0.05, df = 5) showed that the samples can be considered as two distinct local populations and supports previous morphometric discrimination.

A total of 648 dolphinfishes were examined for internal and external parasites in western Mediterranean (Balearic Islands) and central-eastern Atlantic (Canary Islands) waters in order to make a comparative study between the two areas. The specimens studied from the Mediterranean Sea was Coryphaena hippurus, with 62 large individuals captured from May to September and 497 juveniles captured from August to December. The specimens studied from the central-eastern Atlantic were 39 adult C. hippurus and 49 adult Coryphaena equiselis. Loggerhead turtles (Caretta caretta) spend most of their life in large marine areas occupying a variety of habitats where they are exposed to different types of threats. Among these, marine litter is known to pose a risk of entanglement or ingestion. Areas of risk exposure can be identified where the species overlap with litter accumulations, but gathering data on this highly mobile species and marine litter, especially in high sea areas, is challenging. According to James (1984) there are few data available about the status and the distribution of the Storm Petrel in the Mediterranean Sea. Bibliographical research shows us how this species is generally decreasing in the whole Mediterranean, and even disappeared in many breeding sites. Fig. 1 gives the actual situation.
