Transfer of milk fatty acids to Pecorino Siciliano cheese

In previous studies it was observed that milk fatty acid (FA) composition is mainly affected by diet, and when ruminants graze pasture the percentages of polyunsaturated FA and conjugated linolenic acid (CLA) are higher than in milk from preserved forage. The maintenance in the cheese of the beneficial FA profile of milk from grazing ruminants is advisable. The use of bacteriophages provides an attractive approach to the fight against food-borne pathogenic bacteria, since they can be found in different environments and are unable to infect humans, both characteristics of which support their use as biocontrol agents. Animal rennets as sources of dairy lactic acid bacteria

ABSTRACT The microbial composition of artisan and industrial animal rennet pastes was studied by using both culture-dependent and -independent approaches. Pyrosequencing targeting the 16S rRNA gene allowed to identify 361 operational taxonomic units (OTUs) to the genus/species level. Among lactic acid bacteria (LAB), Streptococcus thermophilus and some lactobacilli, mainly Lactobacillus crispatus and Lactobacillus reuteri , were the most abundant species, with differences among the samples. Experimental Evaluation of a New Thermal Process for Microorganisms Inactivation

A new thermal process for the inactivation of microorganisms in beverages has been studied and is presented in this paper. The treatment, not yet studied in the scientific literature, mainly consists of a thermal shock characterized by temperature increases up to 30°C/s, with final temperatures up to 65°C. Gingival bleeding reduction using a carbamide peroxide based tooth paste with lactoperoxidase

Introduction: The combination of carbamide peroxide, thiocyanate or enzymes such as amynoglucosidase or gluco-oxidase is able to reduce gingival inflammation. Objective: To evaluate antiseptic efficacy, in relation to reduced gingival bleeding, of a new dentifrice containing carbamide peroxide and lactorperoxidase. Materials and method: A sample of 32 patients, with periodontal pockets of more than 3mm in the vestibular area and 4 mm at interproximal sites, was divided into two groups of 16 and 17 patients respectively. This study aimed to assess the effect of addition of NHA on wear of resin modified glass ionomer (RMGI) by tooth brushing simulation. Evaluation of the Clinical Efficacy of Potassium nitrate Desensitizing Mouthwash and a Toothpaste in the Treatment of Dentinal Hypersensitivity

Potassium Nitrate has been used as a desensitizing agent to treat dentinal hypersensitivity. The effectiveness of a potassium nitrate is evaluated both in the form of a toothpaste and a mouthwash in a clinical study. Thirty patients were assessed using evaporative stimuli and thermal stimuli and response was evaluated using Visual Analogue Scale at baseline, at 2 weeks and 4 weeks.
