Recent advances in the application of microbial transglutaminase crosslinking in cheese and ice cream products: A review

Microbial transglutaminase (MTGase) has been currently utilized to form new food structures and matrices with high physicochemical stability. Incorporation of this multi-functional enzyme into structural composition of milk protein-based products, such as cheese and ice cream, can not only be a successful strategy to improve their nutritional and technological characteristics through intramolecular cross-linking, but also to reduce the production cost by decreasing fat and stabilizer contents. Chemical variability in the essential oil of Cinnamomum tamala L. leaves from India.

The chemical composition of the essential oils obtained from the fresh leaves of Cinnamomum tamala Nees et Eberm. was determined by GC and GC–MS. The yield of the oil on a dry weight basis ranged from 1.2% to 3.9% (w/w). Phenyl propanoids constitute the major portion (88.9–95.0%) of the oils. Fifty-four compounds were identified from the oils. Eugenol (91.4–41.8%) was the main compound, followed by eugenyl acetate (0.0–47.1%) and α-phellandrene (0.6–2.5%) in the analysed oils.

Adsorption of gelatin during electrodeposition of copper and tin-copper alloys from acid sulfate electrolyte

International audience; An acid Cu–Sn deposition bath was developed, and copper and copper–tin coatings were electrodeposited on polycrystalline platinum. The effect of gelatin on copper and copper–tin electrodeposition from acid sulfate solutions has been investigated by a variety of electrochemical methods (voltammetric studies and electrochemical quartz crystal microbalance) as well as by morphologic technique (scanning electron microscopy). The thistle-infesting fruit fly Tephritis conura Loew (Diptera: Tephritidae) forms host races on the melancholy thistle, Cirsium hetewphyllum (L.) Hill (Asterales: Asteraceae) and the cabbage thistle, Cirsium olemceum (L.). Scop. Previous research indicates that the host shift occurred from C. hetewphyllum to C. oleraceum. In this paper we address whether the host shift involved physiological adaptations by studying oviposition acceptance and survival of the two host races on the derived host C. oleraceum. BACKGROUND: The replacement of fat by thickeners in fat-free yoghurts leads to an important modification of aroma compound partitioning, with an impact on aroma perception. Investigation of retention/release equilibria allows a good understanding of aroma compound behaviour depending on food composition. On the discreet spectrum of fractional quantum hydrogen atom in two dimensions

We consider a fractional generalization of two-dimensional (2D) quantum-mechanical Kepler problem corresponding to 2D hydrogen atom. Our main finding is that the solution for discreet spectrum exists only for $\mu>1$ (more specifically $1 < \mu \leq 2$, where $\mu=2$ corresponds to "ordinary" 2D hydrogenic problem), where $\mu$ is the L\'evy index. We show also that in fractional 2D hydrogen atom, the orbital momentum degeneracy is lifted so that its energy starts to depend not only on principal quantum number $n$ but also on orbital $m$. Eutrophication reduces the nutritional value of phytoplankton in boreal lakes

Eutrophication (as an increase in total phosphorus [TP]) increases harmful algal blooms and reduces the proportion of high-quality phytoplankton in seston and the content of ω-3 long-chain polyunsaturated fatty acids (eicosapentaenoic acid [EPA] and docosahexaenoic acid [DHA]) in fish.
