The present review aims to show the state of the art of oxidation mechanisms occurring especially in white wines by taking into account knowledge from different fields in relation to the subject. It is therefore divided into three main parts. First, the mechanisms of oxidation relevant to white wine are discussed in the light of recent scientific literature. Next, the phenomenon of oxygen solubility in wine during the winemaking process, and in particular during bottling is stated theoretically as well as practically. Abstract Polyphenoloxidases (PPO) of the type-3 copper protein family are considered to be catecholoxidases catalyzing the oxidation of o-diphenols to their corresponding quinones. PPO from Grenache grapes has recently been reported to display only diphenolase activity. In contrast, we have characterized PPOs from Dornfelder and Riesling grapes which display both monophenolase and diphenolase activity. Ultracentrifugation and size exclusion chromatography indicated that both PPOs occur as monomers with Mr of about 38 kDa. Properties of solid-liquid interfaces are of immense importance for electrocatalytic and electrochemical systems, but modeling such interfaces at the atomic level presents a serious challenge and approaches beyond standard methodologies are needed. An atomistic computational scheme needs to treat at least part of the system quantum mechanically to describe adsorption and reactions, while the entire system is in thermal equilibrium. This work addresses a number of fundamental questions regarding the topological description of materials characterized by a highly porous three-dimensional structure with bending as the major deformation mechanism. Highly efficient finite-element beam models were used for generating data on the mechanical behavior of structures with different topologies, ranging from highly coordinated bcc to Gibson–Ashby structures. beta-Ionone, an aroma compound exhibiting flower notes, can be obtained from beta-carotene in a cooxidation system utilizing xanthine oxidase-generated reactive oxygen species (ROS). ROS have to be controlled as, although they can give rise to beta-ionone, they may also degrade it. In this work, the biotransformation of beta-carotene into beta-ionone was investigated in systems containing variable proportions of decane to extract beta-ionone before degradation. The use of 50% or 90% decane resulted in increased production yields. Following our previous investigations on aqueous solutions of hypooxidized and iperoxidized species, we managed, by lowering the temperature of the solutions to 0 degrees C, to obtain, by electrochemical methods, Yb(II) and Yb(III) mixtures, enough stable to determine by a potentiometric method the formal redox potential of the Yb(IlI, II) couple. Its value, in a large range of total Ytterbium concentration, is -1233 +/- 3 mV against the molal hydrogen electrode in the 3.22 m NaCl medium.

International audience; We present a new method for the visualization of spectral images, based on a selection of three relevant spectral channels to build a Red-Green-Blue composite. Band selection is achieved by means of information measures at the first, second and third orders. Irrelevant channels are preliminarily removed by means of a center-surround entropy comparison. Unlike traditional methods, we propose to operate a local analysis instead of considering that all the pixels are part of the same population. It takes a segmentation map as an input and then achieves a dimensionality reduction adaptively inside each class of pixels.
