The ionizing radiation treatment of food is nowadays a worldwide recognized tool for food preservation, provided that proper and validated identification methods are available and used. The thermoluminescence (TL) technique is one of the physical methods recommended by the European Committee for Standardization to distinguish irradiated from not irradiated samples, for food containing silicate minerals as contaminants, such as spices and aromatic herbs, which are among the most frequently irradiated foods. IRA-EMO : Interactive Method Using Reservation and Aspiration Levels for Evolutionary Multiobjective Optimization

We propose a new interactive evolutionary multiobjective optimization method, IRA-EMO. At each iteration, the decision maker (DM) expresses her/his preferences as an interesting interval for objective function values. The DM also specifies the number of representative Pareto optimal solutions in these intervals referred to as regions of interest one wants to study. Finally, a real-life engineering three-objective optimization problem is used to demonstrate how IRA-EMO works in practice for finding the most preferred solution. peerReviewed

Microbiological and physico-chemical aspects in dry-salted Spanish ham.

The main microbiological and physico-chemical parameters in dry-salted ham previously selected were determined during the elaboration process. All determinations were performed at 2 levels: surface and internal. The selected microbiological parameters were: total aerobes, halotolerant, lactic acid bacteria, yeasts and hazardous microorganisms. NaCl, nitrate, nitrite, water activity, moisture, pH, temperature and loss of weight were selected for the physico-chemical study. Convergent adaptation of Saccharomyces uvarum to sulfite, an antimicrobial preservative widely used in human-driven fermentations

Different species can find convergent solutions to adapt their genome to the same evolutionary constraints, although functional convergence promoted by chromosomal rearrangements in different species has not previously been found. In this work, we discovered that two domesticated yeast species, Saccharomyces cerevisiae, and Saccharomyces uvarum, acquired chromosomal rearrangements to convergently adapt to the presence of sulfite in fermentation environments. We found two new heterologous chromosomal translocations in fermentative strains of S. uvarum at the SSU1 locus, involved in sulfite resistance, an antimicrobial additive widely used in food production. Characterization of cryopreserved rat liver parenchymal cells by metabolism of diagnostic substrates and activities of related enzymes

The metabolism of testosterone and benzo(a)pyrene (BaP) which is mediated by diverse enzymes was determined in cryopreserved rat liver parenchymal cells and compared with that found in freshly isolated cells. In addition, the activities of single xenobiotic-metabolizing enzymes were measured by using specific substrates. The cytochrome P450 (P450)-mediated total metabolic conversion of testosterone was reduced to 55% in cryopreserved cells. The metabolite profile, i.e. the formation of single metabolites compared with total metabolic conversion, was however unchanged when compared with freshly isolated cells.
