Production of sulfur flavors by ten strains of Geotrichum candidum

ABSTRACT Ten strains of Geotrichum candidum were studied on a liquid cheese model medium for the production of sulfur compounds which contribute to the aroma of cheeses. The volatile components produced by each cultured strain were extracted by dynamic headspace extractions, separated and quantified by gas chromatography (GC), and identified by GC-mass spectrometry. It was shown that four strains of this microorganism produced significant quantities of S -methyl thioacetate, S -methyl thiopropionate, S -methyl thiobutanoate, S -methyl thio iso butanoate, S -methyl thio iso valerate, and S -methyl thiohexanoate. Determination of cow's milk and ripening time in nonbovine cheese by capillary electrophoresis of the ethanol-water protein fraction

A novel method is reported for analyzing adulteration of goat and ewe cheeses with cow's milk: capillary zone electrophoresis (CZE) in isoelectric, acidic buffers (50 mM imino diacetic acid, IDA, pH = pI 2.3). The cheese samples were extracted with a 20:80 v/v ethanol-water mixture in presence of 3 M urea and 1% beta-mercaptoethanol for 1 h. After centrifugation and lipid extraction, the samples were dissolved in 50 mM IDA, 6 M urea and 0.5% hydroxyethyl cellulose and analyzed by CZE at 700 V/cm. Physiological and molecular analysis of the maturation process in fruits of Clementine Mandarin and one of its late-ripening mutants

Peel color is one of the main features affecting citrus quality. Clementine is a widespread citrus species with several mutants showing a delay in pigmentation and harvesting. This work characterizes the fruit development and ripening of two clementine clones, 'Comune', a widespread variety, and one of its natural mutations, 'Tardivo', which differ by a delayed color-break and extended harvest period. Morphological, chemical, and molecular analyses were carried out on fruits of both genotypes during the whole maturation process. In Sicily, the chestnut (Castanea sativa Mill.) grows in limited areas of the South eastern Mt. Etna volcano and of the Northern Mountains, namely Madonie and Nebrodi. In the Island, chestnut can be considered as a neglected species, because of the modest importance recognized to it for horticultural and forestry exploitation. Background: Consumption of raw cheese may be associated with different diseases. This study aimed to evaluate behavior of four pathogenic bacteria during manufacture and ripening of Protected Designation of Origin (PDO) Pecorino Siciliano cheese.

Vertical distribution of crop load and fruit quality within vase- and Y-shaped canopies of 'Elegant Lady' peach

Canopy shape and depth may influence crop uniformity of peach trees at harvest. To test this hypothesis we examined yield distribution and fruit quality changes at different canopy levels of peach trees trained to delayed vase (DV) and perpendicular Y (Y). Trees of both training forms were divided vertically into six or seven 50-cm-deep layers and fruit was harvested at commercial ripening from each layer separately. Regardless of training form, number of fruit and yield per layer were highest in the central part of the canopy, but more evenly distributed among canopy layers in Y trees. PREDICTION OF HARVEST TIME IN PEACH [PRUNUS PERSICA (L.) BATSCH] FRUIT USING THE DA-METER

The aim of this work was to define the most appropriate time of harvesting early ripening peach fruit using destructive and non-destructive quality indexes such as the index of absorbance (IAD), measured with the DA-Meter, a portable equipment able to measure the degradation of chlorophyll in the pericarp. In this context our research was carried out in 2009 and 2010 on several peach cultivars. Total soluble solid content increased while flesh firmness and total acidity decreased with IAD values, but no significant correlation was found between destructive and non-destructive parameters.

The spatial distribution of bacteria in Grana-cheese during ripening.

The microbial composition and its spatial distribution of Grana Trentino, a hard Parmesan-like cheese, was determined, from vat milk to cheese. After cutting along the vertical axis of the cheese wheels, three layers were sampled diagonally across the cheese: under the cheese rind, an intermediate section and the cheese core. After two different ripening periods (9 and 18 months), the cheese samples were analysed using traditional culture dependent and culture independent methods. Fruit quality and flavor compounds before and after commercial harvest of the late-ripening ‘Fairtime’ peach cultivar

ABSTRACT In this work quality of tree ripe and commercial ripe ‘Fairtime’ peach fruit was evaluated during fruit maturation and storage. Quality parameters and volatile fraction were monitored at intervals of 7-15 days from pit hardening until 10 days after commercial harvest and after 7, 17 and 24 days of refrigeration. In fruit on the tree, weight increased quadratically, diameter and peel color increased linearly, whereas flesh firmness decreased linearly.
