Carotenoids and Color of Fruit Juice and Milk Beverage Mixtures

Seventeen commercially available, "ready to drink" fortified beverages consisting of mixtures of fruit juices and milk were analyzed to evaluate their carotenoid profile (including their Z/E stereoisomers) and color during their commercial shelf life. Lightness (L*) was found to be correlated with the content of milk in the mixtures (r= 0.649) whereas red-yellow colors were correlated with the contents of alpha-carotene, beta-cryptoxanthin, and beta-carotene supplied by the fruit. The beverages stored under refrigeration (4 +/- 2 degrees C) showed higher luminosity (L*) and higher saturation of color (C*) and yellowness (b*). The effect of three different periods of storage life (0, 15 and 30 days) on the microbiological quality of several foods elaborated with the sous vide cook–chill procedure in a restaurant was studied. These foods are grouped in three categories: meat (breast chicken, foie gras, pork loin and entrecote of veal), fish (codfish, gilt head sea bream, hake and salmon) and vegetable (broccoli, courgette, potato and carrot). There is limited information in the literature concerning the feasibility of using algal extracts as natural additives for improvement of the quality and shelf-life ofmeat products. Hence, a Fucus vesiculosus extract (FVE) at the concentrations of 250mg kg-1 (FVE-250), 500mg kg-1 (FVE-500) and 1000mg kg-1 (FVE-1000) were added to pork patties with linseed oil oleogel as a fat replacer. Qualitative traits and shelf life of fig fruit (cv Melanzana) treated with Aloe vera gel coating

The fig (Ficus carica L.) cv Melanzana is typical of Southern Italy. This cultivar produces breba fruit in June and fig fruit in August. Some previous studies on the use of coatings extracted from stems of Aloe vera showed positive effects to maintain fruit quality during shelf life. Melograno, studio sulla qualità degli arilli con la conservazione in atmosfera modificata

In conclusione possiamo dire che lo studio sull’ applicazione della tecnologia MAP su arilli di melograno ha dimostrato la sua applicabilità e la sua efficacia per tutto il tempo di conservazione, mostrando, congiuntamente alle analisi sensoriali, un miglior mantenimento delle caratteristiche qualitative fino a 8 giorni di conservazione alla temperatura di 4±1°C con umidità relativa del 90-95%. Successivamente ad 8 giorni di conservazione gli arilli, pur mantenendo buoni parametri qualitativi, subiscono un eccessivo calo nella valutazione sensoriale, tale da non giustificare l’applicazione della tecnologia MAP. La disidratazione delle nespole, sia a polpa gialla che a polpa bianca, rappresenta un metodo innovativo per prolungare la shelf-life dei frutti e per poter reinventare un prodotto che altrimenti verrebbe individuato come scarto alimentare. Anche se alcuni parametri, come il colore e la consistenza, hanno subito un cambiamento, rimangono comunque apprezzati a livello sensoriale. Introduction – Treatments with 1-methylcyclopropene (1-MCP), an inhibitor of ethylene perception, were investigated on white-flesh loquat fruit to extend its shelf life and to prevent chilling injury. Ma- terials and methods – The loquat (Eriobotrya japonica Lindl.) white-flesh fruits (cv. Claudia) were submitted to applications of 1-MCP at 1 °C for 20 h and at concentrations from 1 to 5 μL L .
