Microbiological and physicochemical profile of sugar added ewe’s Ricotta during storage
2022
The microbiological and physicochemical traits of fresh ewe’s Ricotta made with (40% w/w) and without sucrose were investigated. Sugar added Ricotta (SAR) andcontrol Ricotta (CTR) were packaged and stored at 4°C for 90 d. Salmonella spp., Listeria monocytogenes,Escherichia coli, coagulase positive staphylococci, Enterobacteriaceae, total coliforms, Pseudomonas, yeasts, moulds and clostridia were undetectable during the entire monitoring. Total mesophilic and psychrotrophic microorganisms and mesophilic cocci lactic acid bacteria increased over time, but their development was limited in SAR production. The acidificationwas observed only for CTR. Water activity was consistently low(0.897 on av…
An Investigation of the Shelf-life of PDO Vastedda della Valle del Belice Cheese Subjected to Different Packaging Systems Alternative to Vacuum
2015
The aim of this study was to evaluate the effect of different packaging systems alternatives to vacuum that is commonly applied for PDO Vastedda della Valle del Belice (VdB) cheese, a tipical pasta filata cheese, made with raw ewes’ milk. After production following the traditional cheesemaking protocol, VdB cheeses were packaged as follows: vacuum, paraffin wax and two different Modified Atmosphere Packaging (MAP) consisting of a gas mixture of 70% CO2-30% N2 (MAP1) and 100% N2 (MAP2). Cheeses were stored at 4°C and analyzed (25 g) at time 0 and after 15, 30, 60, 90, 120 and 180 days. All the samples were subjected to microbiological analyses for the evaluation of total mesophilic aerobic b…
Chitosan Film Functionalized with Grape Seed Oil—Preliminary Evaluation of Antimicrobial Activity
2022
Although the fishing and wine industries undoubtedly contribute significantly to the economy, they also generate large waste streams with considerable repercussions on both economic and environmental levels. Scientific literature has shown products can be extracted from these streams which have properties of interest to the cosmetics, pharmaceutical and food industries. Antimicrobial activity is undoubtedly among the most interesting of these properties, and particularly useful in the production of food packaging to increase the shelf life of food products. In this study, film for food packaging was produced for the first time using chitosan extracted from the exoskeletons of red shrimp (Ar…
An Innovative Shelf Life Model Based on Smart Logistic Unit for an Efficient Management of the Perishable Food Supply Chain
2017
Despite the recent interest towards food safety and control, it is generally difficult to ensure full products traceability through industrial food chains, due to the lack of efficient information and communication systems. Consequently, nowadays, the protection of food products often ends at the gates of the producer without any investigation about the status of their quality at the consumer’s location. The aim of this paper was the development of a supply chain monitoring system based on a smart logistic unit (SLU) to support the integrated management of the food supply chain from “farm to fork” in order to guarantee and control food safety and shelf life (SL) of products in agreement wit…
Effect of Vibration on the Quality of Strawberry Fruits Caused by Simulated Transport
2016
Mechanical damage of agricultural products is one of the main problems in the harvest and postharvest chain due to the large economic loss that the shelf life reduction could generate. Measurements of change in the chemical components of highly perishable products and microbial growth under different static and dynamic loads is the first step in the development of intelligent logistic units that could help in predicting the residual shelf life in order to minimize losses along the supply chain. In our research, the effects of vibration along the supply chain of a case study were analyzed on strawberry (Fragaria x ananassa) and woodland strawberry (Fragaria vesca) in terms of microbiological…
Evaluation of quality parameters of strawberry fruits in modified atmosphere packaging during storage
2010
The objective of the present study is to evaluate the effect of modified atmosphere packaging (MAP) during storage on some quality parameters of strawberries. Strawberries (cv. Camarosa) were harvested when mature, forced air cooled and divided into two groups as fruits in MAP and control. After packaging, fruits were stored at 0°C, 90 - 95% RH for 10 days plus 1 day at 20°C and 50 - 55% RH for the evaluation of shelf life. Changes in fruit quality, mass loss, decay, color, firmness, total soluble solids (TSS), acidity, glucose, fructose, saccharose and color were investigated. The mass loss and decay were lower in MAP than observed in the control whereas firmness, TSS, acidity and color di…
Guarana seed extracts as a useful strategy to extend the shelf life of pork patties: UHPLC-ESI/QTOF phenolic profile and impact on microbial inactiva…
2018
Abstract The antioxidant and antimicrobial effects of guarana seed extracts (GSE) added to pork patties were evaluated for 18 days storage at 2 ± 1 °C. Five treatments were prepared: i) without natural antioxidant [control (negative control)], ii) with BHT at 200 mg/kg (positive control), and iii) with three different concentrations: 250 mg/kg (guarana seed low dose-GSL), 500 mg/kg (guarana seed medium dose-GSM) and 1000 mg/kg (guarana seed high dose-GSH) of guarana extracts, respectively. The pH, instrumental colour (CIE L*, a*, b*), total viable counts (TVC), Pseudomonas spp. counts and lactic acid bacteria (LAB) counts, 2-thiobarbituric acid reactive substances (TBARS) and carbonyl co…
Suitability of Borago officinalis for Minimal Processing as Fresh-Cut Produce
2019
Borage (Borago officinalis L.) is a wild vegetable appreciated as a folk medicine and for culinary preparations. The introduction of borage as a specialized cultivation would allow for the diversification of vegetable crops and would widen the offerings of raw and minimally processed leafy vegetables. Thus, the aim of the research was to evaluate the quality and shelf-life of fresh-cut borage stored at different temperatures. Borage plants were grown during the autumn&ndash
Simulation analysis of cold chain performance based on time–temperature data
2011
Perishable goods are a fundamental source of revenue for the retail sector; their management, however, constitutes a severe challenge for retailers and supply chain partners. A significant cost in particular is the fraction of products perished through the supply chain, which also constitutes an ethical and environmental concern. Supply chain organisation and operative characteristics have a significant influence on this matter, as in fact ensuring suitable temperature conditions for the stock-keeping units throughout the supply chain is mandatory for perishable products. Recent developments in sensing and communication technologies allow detailed monitoring and control of cold chain; howev…
Effect of Three Different Aloe vera Gel-Based Edible Coatings on the Quality of Fresh-Cut “Hayward” Kiwifruits
2020
In recent years, the market for minimally processed fruit has increased. Fresh-cut fruits are characterized by a short shelf life due to the processing phases that accelerate the ripening courses. The aim of this work is to analyze the effect on the quality of fresh-cut Hayward kiwis of three different edible coatings based on (1) Aloe vera gel, (2) Aloe vera gel + hydroxypropyl methylcellulose and (3) Aloe vera gel + lemon essential oil. Fruit firmness, weight loss, color, soluble solids content, titratable acidity, microbial load and sensory analysis were evaluated as fresh after 2, 4, 7 and 10 days. Aloe vera gel and Aloe vera gel + lemon essential oil maintained the best values, as they…
