A Lactobacillus plantarum strain was used for the production of rye, wheat, barley, and oat sourdoughs, and the influence of different sourdoughs on mixed rye–wheat bread quality parameters and acrylamide formation was evaluated. L. plantarum LUHS135 demonstrated versatile carbohydrate metabolism, good growth and acidification rates, and the ability to excrete amylolytic and proteolytic enzymes in various cereal sourdoughs. The same starter and different cereal substrates allow to produce sourdoughs showing different characteristics. Background and Aims Oenococcus oeni is the lactic acid bacteria species that best adapts to harsh wine conditions. This species is currently the main component of the malolactic starter cultures used in winemaking. Other species of lactic acid bacteria, however, such as Lactobacillus, can also conduct the malolactic fermentation, especially in low acidity wines. Motivations for Business Start-up: Are There any Differences Between Disabled and Non-disabled Microfinance Clients?

We use an Ecuadorian sample to investigate if there are differences in motivations for business start-up between persons with and without disabilities. Generally, we do not document significant differences. The reason might be that we use a sample selected among customers of the microfinance bank Banco D-MIRO. The effect of different starting procedures on sprinters' reaction time.

We examined the effect of different false start rules and starters' holding time on athletics sprinters' reaction times. Reaction times from 210 female (25.2 ± 3.8 years) and 361 male (24.8 ± 3.8 years) 100 m sprinters, participating in international championships for seniors from 1997 to 2011, were analysed. Holding time calculations were based on television recordings from the analysed heats (n = 267). Mean reaction times have increased by 20% (0.03 s, P0.001) during a 15 year period due to stricter false start rules. Starters' holding times were between 1.3 and 2.2 s for the analysed competitions. A startling auditory stimulus (SAS) causes a faster execution of voluntary actions when applied together with the imperative signal in reaction time tasks (the StartReact effect). However, speeding up reaction time may not be the best strategy in all tasks. After a self-initiated fall, the program for landing has to be time-locked to foot contact to avoid damage, and therefore advanced execution of the program would not be convenient. The execution of a ballistic movement within a reaction time task paradigm is significantly speeded up when an unexpected startling auditory stimulus (SAS) is delivered together with the imperative signal. Using Libet's clock, we investigated whether acceleration involves also the subjective appraisal of the time of task execution. In trials containing the SAS, reaction time shortened to 68.7% of control values. However, subjective judgment of task execution remained a similar time with respect to the imperative signal as in control trials. Prior research showed that mere instructions about the contingency between a conditioned stimulus (CS) and an unconditioned stimulus (US) can generate fear reactions to the CS. Little is known, however, about the extent to which actual CS-US contingency experience adds anything beyond the effect of contingency instructions. Our results extend previous studies on this topic in that it included fear potentiated startle as an additional dependent variable and examined return of fear (ROF) following reinstatement.
