Water and temperature contribution to the structuration of starch matrices in the presence of flavour

The effect of hydrothermal treatments and flavours addition on starch structure and its physical properties were studied. Native wheat starch was treated at 2 different hydrations (water-starch ratios: 50/50 and 80/20 g w/w) and temperatures (65 and 85 °C) in the presence of flavours (ethyl hexanoate and 2-hexanone). The freshly prepared samples were subjected to DSC and flavour analysis. Flavour inclusion complex could not be detected by DSC, however the result of flavour analysis proved that there were flavours interactions with starch. Organic coatings applied on the surface of cast iron pipes ensure very good chemical and anti-corrosion protection against aggressive effluents. To improve adherence between coating (epoxy) and substrate, a surface preparation is required. Du comptage ponctuel à l'affectation par simulation multi-agents : application à la circulation routière de la ville de Dijon

A travers une démarche expérimentale de simulation de la circulation routière pour estimer les pollutions atmosphériques en milieu urbain, cette proposition questionne les opportunités qu'offre la simulation multi-agents pour intégrer des données d'observations du trafic routier au sein d'un système d'information géographique. Pour cela, la construction du modèle d'affectation s'est faite en deux étapes : une première, d'acquisition et de structuration des données de comptages et une seconde visant à interfacer ces données au sein d'une plateforme de simulation multi-agents pour en reproduire la variabilité intra journalière et la fréquentation routière.

Tomographic image processing for the morphological and metrological study of Valsalva sinuses

This Phd thesis deals with the design and the use of image processing tools in order to allow a reliable and objective study of the sinuses of Valsalva which are important cavities of the aortic root. The proposed methods can be applied on cine-MR sequences and CT examinations without any change in the settings between two examinations.Firstly, we studied the morphology of this anatomical area and its constant properties in all images of the dataset. The aril of Momordica cochinchinensis (gac), plant from the Cucurbitaceae family, is the richest source of lycopene and β-carotene, which are a strong antioxidant and a pro-vitamin A, respectively, interesting for health-complements. First, a process of soft extraction-fractionation was developed for extracting effectively the natural carotenoids from gac without loss of their original quality. Then, the lycopene and β-carotene extracted from gac were analyzed and characterized. At least 95% of the extracts were composed of the all-trans isomer. A combined optical-microwave method to retrieve soil moisture over vegetated areas

A simple approach for correcting for the effect of vegetation in the estimation of the surface soil moisture (wS) from L-band passive microwave observations is presented in this study. The approach is based on semi-empirical relationships between soil moisture and the polarized reflectivity including the effect of the vegetation optical depth which is parameterized as a function of the normalized vegetation difference index (NDVI). The method was tested against in situ measurements collected over a grass site from 2004 to 2007 (SMOSREX experiment). Research of this thesis consists in setting up efficient and light solutions to answer the problems of securing sensitive products. Motivated by a collaboration with various stakeholders within the Nuc-Track project, the development of a biometric security system, possibly multimodal, will lead to a study on various biometric features such as the face, fingerprints and the vascular network. This thesis will focus on an algorithm and architecture matching, with the aim of minimizing the storage size of the learning models while guaranteeing optimal performances. This will allow it to be stored on a personal support, thus respecting privacy standards.
