Selenium bio-enrichment of Mediterranean fruit juices through lactic acid fermentation.

Abstract This work was carried out to elaborate selenium (Se) bio-enriched fermented Mediterranean fruit juices. To this purpose, pomegranate and table red grape juices were added with sodium selenite (Na2SeO3) and fermented by Levilactobacillus brevis CRL 2051 and Fructobacillus tropaeoli CRL 2034 individually or combined. To better evaluate the effect of selenite addition and starter strain inoculums on the total bacterial community of the fruit juices, fermentation trials were performed with raw and pasteurized fruit juices. Transesterification of rapeseed oil over acid resins promoted by supercritical carbon dioxide

The methanolysis of rapeseed oil catalyzed by commercial styrene-divinylbenzene macroporous acid resins was performed in a batch reactor at 100-140 °C and 10-46 MPa to study the effect of supercritical carbon dioxide (scCO2) on the performances of the process. Reaction temperatures of 120-140 °C were necessary to obtain high enough yields of fatty acid methyl esters. Upon addition of scCO2 faster transesterification kinetics was obtained also at the lowest investigated operating pressure (10-11 MPa), working in two fluid phase systems. Number of meals eaten in relation to weight status among Norwegian adolescents.

Aim: To assess the relationship between number of meals eaten and weight status, and to assess potential confounders of this relationship. Methods: A total of 2870 (participation rate: 85%) 9th and 10th graders (mean age: 15.5 years) at 33 schools completed questionnaires in May 2005. Number of meals was measured with questions asking whether they ate breakfast, lunch, dinner, and supper the day before, giving a scale ranging from zero to four meals/day. Background: A diet high in fruit and vegetables (FV) is inversely related to chronic diseases, and some studies suggest that increasing the intake of FV reduces the intake of unhealthy snacks. Eight-year trends in food, energy and macronutrient intake in a sample of elderly German subjects.

Time trends in the food and the corresponding energy and macronutrient intake between 1994 and 2002 are investigated as part of the longitudinal study on nutrition and health status in an ageing population in Giessen, Germany (GISELA study). The dietary intake is assessed via a 3 d estimated dietary record especially developed and validated for this study. A total of 2135 records from 532 subjects, aged 60 years and over, are analysed separately according to sex and age groups (born 1904–1928 and born 1929–1942). Consumption of vegetables at dinner in a cohort of Norwegian adolescents.

Abstract This longitudinal study examined the frequency of consumption of vegetables for dinner by Norwegian adolescents and their parents. Associations of perceived availability, correlations and stability were explored. The longitudinal cohort consist of 1950 adolescents attending 6th/7th (2002) and 9th/10th (2005) grade, and their parents (n = 1647). Only 40% of the adolescents and 60% of the adults reported to have eaten vegetables for dinner yesterday, the reported frequency of vegetables for dinner were 3.7 and 4.1 times/week in 2002 and 2005, respectively, and 4.8 times/week for parents.
