Abstract In this study, the effects of both ultrasonic bath and probe treatments on the phenolic, chromatic and aroma composition of young red wine Cabernet Sauvignon were studied and modeled by artificial neural networks (ANNs). Moreover, the effect of high power ultrasound (HPU) along with antioxidants addition (sulfur dioxide and glutathione) was investigated during 6 months of aging in bottles. Lower amplitude and temperature, shorter treatment duration and particularly lower frequency showed a more favorable and milder effect on the chemical composition of wine. Abstract This study was conducted to investigate wine professionals’ perception of aging potential of red wines. In the first experiment, 41 wine professionals assessed sixteen commercial Burgundy red wines via a binary categorization task, an aging potential rating task, and a hedonic rating task and an analytic sensory evaluation including an astringency and a bitterness rating task. The wines were also analyzed by High-Pressure Liquid Chromatography with a UV Detector (HPLC-UV) and their color was evaluated using Hue (H∗), Lightness (L∗) and Chroma (C∗) measurements. A number of headspace techniques have been compared, using a standard solution containing 12 compounds and a wine sample, viz.: (1) purge and cold trap injection; (2) dynamic headspace combined with liquidliquid extraction; (3) static headspace with and without preconcentration; (4) direct liquid injection. The sensitivity, reproducibility and speed of analysis were determined.
