EFFECT OF SHAPE ON POTATO AND CAULIFLOWER SHRINKAGE DURING DRYING
ABSTRACT Shrinkage of potato cubes, parallelepipeds and cylinders was addressed during drying. A basic methodology by using image analysis was set-up in order to measure and monitor geometrical changes along the drying process. Both measurements by image analysis and directly with a calliper were carried out. Results from both methods showed a good agreement with no bias. Particle shape was found to influence shrinkage in a different way according to the axis. In fact the larger dimension shrinks less than the shorter one. Microbial and chemical changes in 'Sobrasada' during ripening.
‘Sobrasada’ is a raw-cured product typical of Mallorca (Balearic Islands). Throughout its ripening process the product, like other raw-cured sausages, undergoes a series of chemical and microbial changes which lead to the formation of its desirable final characteristics. In the ‘sobrasada’ studied, the breeds, feeding and casings used in the Balearic Islands were employed. The evolution of different groups of microorganisms was followed: mesophylic aerobic microorganisms, lactic acid bacteria, Enterobacteriaceae, yeasts and moulds, group D Streptococcus, proteolytic microorganisms and lipolytic microorganisms. VAPOR-LIQUID EQUILIBRIUM CALCULATIONS USING THE TOPOLOGICAL TREATMENT OF MIXTURES.
The Topological Treatment of mixtures is applied to several kinds of binary mixtures to obtain VLE diagrams. The excess Gibbs free energy, gE, is calculated as the product of a topological vector and an information vector. The pure compound topological description were obtained following the DARC system rules. A weighting function was introduced to obtain the topological description of a mixture. The information vector is calculated from experimental data. It is shown that for binary mixtures alcohol-alkane, the components of this vector varies linearly with the average number of carbon atoms of chemical compounds. Wine Aroma Concentration by Using a General Purpose simulator (ProSim)
In this work is proposed the application of the ProSim process simulator for the analysis of wine aroma concentration by performing a two-level simulation: First, ProSim is used to attain a preliminary design of a distillation tower, and afterward the simulator is employed to analyze the behavior of the tower in a more precise way. The UNIFAC model was used for nonideal behavior description of the mixtures. In this application, the concentration of a 13-compound mixture was simulated. ABSTRACT Open sun drying has lost its previous importance due to the fact that different factors affect its reliability and the quality of the products obtained. One of the set–backs for the analysis of solar drying exoeriments is their deoendence on a non–controlled source of energy, i.e. solar radiation depends on climatic conditions and experiments are difficult to compare. It is thus necessary to investigate the advantages of a particular set up as well as the climatic influences.
