Effect of seasonality on physico-chemical and microbiological properties of nicastrese milk and artisanal cheese

ABSTRACT Nicastrese is an indigenous Italian goat breed reared in the Calabria region under semi-extensive practices. From January to June, the milk yield of 400 multiparous Nicastrese goats was evaluated. In addition, tank milk and ripened cheese samples were subjected to physico-chemical and microbiological analyses with the aim to assess the effect of the seasonality on quality parameters. The volatile organic compounds profile of the ripened Nicastrese cheese samples was evaluated. Alkaline phosphatase survey in pecorino siciliano PDO cheese

The determination of alkaline phosphatase (ALP) in cheeses has become an official method for controlling cheeses with a protected designation of origin (PDO), all of which use raw milk. PDO cheeses, characterized by high craftsmanship, usually have an uneven quality. However, for these cheeses, it is necessary to establish ALP values so that they can be defined as a raw milk product. In this study, a dataset with Pecorino Siciliano PDO samples was analyzed to determine ALP both at the core and under the rind. Abstract Nicastrese goat's cheese is produced in the South of Italy under traditional procedures, from raw goat milk without any starter cultures addition. Samples from milk to ripened cheese provided by 4 different farms were subjected to a polyphasic approach to study their physico-chemical, microbiological and sensorial characteristics. Aim of this study was to evaluate the effects of grazing on Trifolium subterraneum and Lolium multiflorum, as pure or associated crops, on the chemical composition and on the fatty acid profile of the intramuscular lipids of the meat of lambs. Effect of propylene glycol on pre- and post-partum performance by dairy ewes

This study was carried out in order to determine the effects, after feeding propylene glycol to Valle del Belice ewes 30 days prepartum and 30 days postpartum, on metabolic profiles, body-condition score, milk yield, milk composition, milk clotting ability and the performance of suckling lambs. Ewes were blocked by parity, body-condition score and previous milk production, and assigned randomly to either a control diet or a diet containing propylene glycol fed at the rate of 80 g/ewe/day (low PG) or 160 g/ewe/day (high PG).
