Extension of Tosela cheese shelf-life using non-starter lactic acid bacteria

Six strains of non-starter lactic acid bacteria (NSLAB) were used to extend the shelf-life of the fresh cheese Tosèla manufactured with pasteurised cows’ milk. The acidification kinetics of three Lactobacillus paracasei, one Lactobacillus rhamnosus and two Streptococcus macedonicus were studied in synthetic milk medium. Lb. paracasei NdP78 and NdP88 and S. macedonicus NdP1 and PB14-1 showed an interesting acidifying capacity and were further characterised for growth in UHT milk and production of antimicrobial compounds. Lb. paracasei NdP78 and S. macedonicus NdP1 grew more than 2 log cycles in 6 h. Lb. paracasei NdP78 was also found to produce a bacteriocin-like inhibitory substance (BLIS) …

Extracts deriving from olive mill waste water and their effects on the liver of the goldfish Carassius auratus fed with hypercholesterolemic diet

The present research aims to evaluate the beneficial effects of polyphenols derived from waste water from a olive mill, obtained by non-plastic molecular imprinting device, in a hypercholesterolemic diet on Carassius auratus, commonly known as goldfish that was selected as experimental model. The study was conducted with morphological and histochemical analyses and also the data were supported by immunohistochemical analysis. Antioxidant activity and phenolic composition in Pomegranate (Punica granatum, L.) genotypes from south Italy by UHPLC/Orbitrap-MS approach

Background: Pomegranate fruits are a rich source of polyphenols with numerous health-promoting effects. Pomegranate juices of five genotypes (‘Mollar’, ‘Kingdom’, ‘Dente di Cavallo’, and two old populations ‘Francofonte’ and ‘Santa Tecla’) were evaluated regarding anthocyanin and non-anthocyanin phenolic contents using ultrahigh performance liquid chromatography (UHPLC)–Orbitrap-mass spectrometry (MS). Food quality and nutraceutical value of nine cultivars of mango (Mangifera indica L.) fruits grown in Mediterranean subtropical environment

Mango (Mangifera indica L.) quality is strongly influenced by genotype but individuating the most appropriate harvesting time is essential to obtain high quality fruits. In this trial we studied the influences of the ripening stage at harvest (mature-ripe or green-ripe) on quality of ready to eat mango fruits from nine cultivars (Carrie, Keitt, Glenn, Manzanillo, Maya, Rosa, Osteen, Tommy Atkins and Kensington Pride) grown in the Mediterranean subtropical climate through physicochemical, nutraceutical, and sensory analysis. Germplasm evaluation to obtain inulin with high degree of polymerization in Mediterranean environment

Long-chain length (DP) inulin-type fructans show pronounced beneficial effects to colon microbiota. In the past, cardoon roots for inulin production to fortify spaghetti gave very good results, but their harvest requires high costs. The aim of the work was to evaluate different types of inulin, extracted from cardoon roots and buds, topinambur tubers and chicory roots local populations in order to identify crops more suitable for high DP inulin production in Mediterranean environment. Ochratoxin A is the only mycotoxins with legal limits in the European Union for wine, by contrast, there is no EU legislation imposed for Aflatoxins and Ochratoxin B. A reproducible and sensitive analytical method for six mycotoxins: Ochratoxin A, Ochratoxin B, Aflatoxins B1, Aflatoxin B2, Aflatoxin G1 and Aflatoxin G2 was developed by using immunoaffinity column cleanup and HPLC-FLD method in 30 sweet wines produced in Sicily.
