Sensory-active compounds influencing wine experts' and consumers' perception of red wine intrinsic quality

The present work combines both sensory and chemical approaches with the final goal of evaluating the sensory-active compounds influencing wine experts' and consumers' perception of red wine quality. Concentrated solutions (4, 5 and 6%w) of kefiran, extracted from kefir grains, have been assessed in term of viscosity and injectability through G26 syringe needles, and for their ability to undergo gelation upon mixing with different alcohols. High yields of valued benzaldehyde and benzyl benzoate are obtained in one pot starting from benzyl alcohol using oxygen as only oxidant under mild conditions (2 bar O2, 100 °C) along with an ultralow amount (0.02 mol %) of Au nanoparticles heterogenized over a spherical ORMOSIL mesoporous support. The process is remarkably selective and the catalyst is stable.

(2015) [1] that the oxidation of 2-methoxybenzyl alcohol (2-MBA) to 2-methoxybenzaldehyde (2-MBAD) proceeds in water under near-UV light with an unexpected catalytic effect of 2-MBAD. In order to investigate the catalytic role of aldehyde in photolytic oxidation of ortho-substituted benzyl alcohols (OSBAs), reactivity runs were carried out with 2-methylbenzyl alcohol (2-MeBA), 2-nitrobenzyl alcohol (2-NBA), 2-hydroxybenzyl alcohol (2-HBA) and 2-chlorobenzyl alcohol (2-CIBA) in the absence and in the presence of their corresponding aldehyde. Abstract The results of an investigation on catalytic systems arising from the electrochemical activation of salts and complexes of several transition metals for the carbonylation of methanol to dimethylcarbonate (DMC) are reported. Metals were tested as inorganic salts or complexes with ligands such as 2,2′-bipyridine (bipy), 1,6-bis (2-oxyphenyl)-2,5-diaza-1,5-hexadiene (salen), 2,4-pentanedionate (acac), triphenylphosphine (TPP) in methanol at room temperature saturated with carbon monoxide at atmospheric pressure. AIM: To evaluate the impact of the diagnosis of hepatitis C infection on lifestyle habits such as smoking, drinking, sports activity and diet. METHODS: A self-administered, anonymous question-naire was offered to out-patients with HCV infection consecutively attending three clinical centres in Italy. RESULTS: Of the 275 respondents, 62.2% (171) were male. Mean age was 51 (range 20-80) years. Overall, after the diagnosis of hepatitis C, 74.5% of drinkers had modified (giving up or reducing) alcohol consumption, 21.3% of smokers had modified their habits and 32.3% of subjects who reported sports activity had either stopped or reduced frequency of activity or chose a less fatiguing sport. The present study aimed to investigate associations between alcohol consumption, including binge drinking, and sexual activity. Data were from 1,622 men and 2,195 women aged ≥50 years participating in the English Longitudinal Study of Ageing. Multivariable logistic regression was used to prospectively assess sex-specific associations between baseline frequency of alcohol use in the last year or binge drinking in the last week (self-reported in 2004/05) and sexual activity at 8-year follow-up (2012/13).
