The variability of crop quality accounts for most of seasonal variation of farmers’ incomes, since fruit growth and quality components may greatly change according to various environmental and within-tree factors. In this review, the technique of soil-less cultivation of horticultural crops is analysed, the main differences between this and traditional cultivation techniques are described, and the advantages and disadvantages of each method in relation to the others are identified. Soilless cultivation has revolutionised various sectors of vegetable and floriculture production, and recent years have also seen interest being shown by Italian fruit crop producers, particularly those involved in table grape viticulture. This study evaluates some physical and chemical characteristics and sensory descriptors of fig fruit cultivars ‘Petrelli’ and ‘Fico di Terlizzi’, belonging to the national germplasm bank of fig trees and cultivated in Southern Italy. For the sensory evaluation of external appearance, the descriptors skin color, pulp color, odor, sweetness, stickiness, bitterness, juiciness, firmness, tannic taste and presence of achenes were measured. Results showed that fresh weight, total soluble solids (TSS), titratable acidity (TA), TSS:TA, firmness, and sensory properties were different for the two cultivars.
