Knowledge, attitudes and self-reported practices of food service staff in nursing homes and long-term care facilities

The aim of this study was to investigate knowledge, attitudes and practices of food service staff in nursing homes and long-term care facilities for the elderly in Sicily, Italy. Association with some demographic and work-related variables was also investigated. This survey provides information and outlines many complex questions concerning the basics of food hygiene. Education level, length of service in the employment and attending courses on food hygiene influenced the knowledge, attitudes and practices of food service staff. This study has evidenced the need for continuous training among food service staff regarding food safety in LTCF and nursing homes.

Hypothalamus plays a major role in the regulation of energy homeostasis by the presence of neural circuits controlling food intake. These circuits are plastic and can be rewired during adulthood. We hypothesized that synaptic plasticity can occur during physiological conditions. We have shown that synaptic contact on hypothalamic anorexigen POMC neurons are rewired in mouse upon high fat diet (HFD). This synaptic process is mandatory to adjust energy intake and requires the glycan PSA (polysialic acid). Aims and objectives To present results from interviews of older people living in nursing homes, on how they experience freedom. Background We know that freedom is an existential human matter, and research shows that freedom remains important throughout life. Freedom is also important for older people, but further research is needed to determine how these people experience their freedom. The background for this article was a Scandinavian study that occurred in nursing homes; the purpose of the study was to gain knowledge about whether the residents felt that their dignity was maintained and respected. Background: Frail individuals experience an accelerated immunosenescence, and exercise has been identified as a therapy to promote a better inflammatory environment. Objective: To analyze the effects of 28-weeks of two different exercise protocols on the functional fitness and immune profiles of institutionalized pre-frail and frail women with mild cognitive impairment.
