Viscoelastic properties of acid milk gel as affected by fat nature at low level

International audience; The viscoelastic properties of acid milk gels containing small amounts of different fats were investigated. Skim milk was reconstituted from ultra low-heat skim milk powder and emulsions made with 2% (v/v) sunflower oil, olive oil, groundnut oil, or anhydrous milk fat using a pressure homogenizer. Acidification at 20 °C for 14 h to pH ∼4.6 was achieved by adding glucono-δ-lactone to the emulsion. Stress relaxation testing enabled determination of the firmness and the solid-like properties, i.e., elasticity. Effects of heat treatment and acid-induced gelation on aroma release from flavoured skim milk

Abstract Time dependent aroma release was studied in skim milk, heated skim milk as well as in acid-induced gels derived from them using static headspace – gas chromatography analysis. A variable order kinetic model was fitted to experimental data and was used to determine headspace equilibrium concentration and initial rates of release. When compared to water, retention in milk based matrices was increased for hydrophobic aroma compounds, while it was decreased for more hydrophilic volatiles. Acid gelation reduced the initial rate of aroma release by a factor varying from 2.0 to 3.8, depending on the compound. Vapour partition of aroma compounds in strawberry flavoured custard cream and effect of fat content

International audience; Gas–matrix partition coefficients (k) of volatile compounds of a strawberry flavour added to a complex model system (custard dessert, COST action 921 recipe) were determined. The influence of fat content on the volatility of the strawberry aroma compounds was investigated using full fat milk- (FFM) and skimmed milk- (SM) custards. Iron Bioavailability in Fortified Fruit Beverages Using Ferritin Synthesis by Caco-2 Cells

The bioavailability of iron from fortified fruit beverages was estimated by an in vitro system including enzymatic digestion, iron uptake by Caco-2 cells, and ferritin formation determined via an enzyme immunoassay (ELISA). Thus, the aim of the present study was to assess iron bioavailability as influenced by the presence of known dietary promoter and inhibitory factors in fortified fruit beverages containing iron and/or zinc and/or skimmed milk. Milk oxidoreduction potential was modified using gases during the production of a model dairy product and its effect on gel setting was studied. Acidification by glucono-delta-lactone was used to examine the physicochemistry of gelation and to avoid variations due to microorganisms sensitive to oxidoreduction potential. Factors associated with milk urea concentrations in Girgentana goats

A total of 1,481 milk samples of 166 Girgentana goats, taken along the entire lactation, were utilised to evaluate the effect of non nutritional factors on milk urea (MU). Parity, stage of lactation and month of sampling significantly influenced MU, while no effect was found for born kids number. The first kidding goats produced lower MU than multiparous goats. Trend of MU was similar to milk production course with a peak found at 60 DIM. The different MU levels between several months of production are often linked to pasture chemical variations.

Milk as an Essential Source of Iodine in Latvian Population

Abstract Milk and dairy products are studied as alternative iodine sources, because salt iodisation is controversial due to high salt consumption leading to cardiovascular diseases. However, the iodine concentration in milk markedly varies. This study evaluated the iodine concentration in cow’s milk available in the Latvian market. Iodine and fat concentration was analysed with a spectrophotometer “Varian Cary 50” based ISO 2446:2008 in 20 milk samples. Darba mērķis Noteikt krūts piena sastāvu un tā ietekmējošos faktorus Latvijā dzemdējušām mātēm, kā arī salīdzināt iegūtos rezultātus ar citu valstu datiem. Materiāli un metodes Piena paraugi tika iegūti no mātēm (5.-7. vai 11.-28. laktācijas dienā), kuru jaundzimušie ārstējās Bērnu Klīniskās Universitātes slimnīcā jaundzimušo nodaļās.
