What olive oil for healthy ageing

The olive tree originated in Asia Minor around 6000 years ago and then spread to all the Mediterranean basin. Olive oil is extracted from the pulp of its fruits [1–3]. Many studies show that the nutritional pattern of the so-called Mediterranean Diet is associated with a lower incidence of age-related diseases related to inflammation and oxidative stress, such as cardiovascular disease, Parkinson's disease, Alzheimer's disease and cancer [4–7]. It is now clear that olive oil, as a main source of fat, must play a key role in explaining the health benefits of the Mediterranean Diet.

Over-evaluation of total flavonoids in grape skin extracts containing sulphur dioxide

Abstract Sulphur dioxide (SO 2 ) proved to increase absorbance at 280 nm of grape skin and seed extracts containing it, diluted with ethanol–HCl to assess total flavonoids and anthocyanins in the same analysis. Additional absorbance at 280 nm was also observed in acetone:H 2 O extracts, if the acetone had not completely evaporated before the extracts were diluted with a solvent. Flavonoids were correctly quantified in the extracts when SO 2 or acetone were removed by solid-phase extraction with a C 18 RP as sorbent and methanol as eluting solvent.

HPLC-DAD-ESI-MS2analytical profile of extracts obtained from purple sweet potato after green ultrasound-assisted extraction

International audience; Ultrasound pre-treatment (UAE) was applied to assist the extraction of valuable compounds (polyphenols (especially anthocyanins), and proteins) from purple sweet potato (PSP). Under optimum conditions (ultrasound time (40 min); supplementary hot extraction (80 °C) up to 120 min; pH: 2.5; ethanol concentration: 58%), the highest concentrations of polyphenols (3.877 mg/g), anthocyanins (0.293 mg/g), and proteins (0.753 mg/g) were found, with minimal specific energy consumption (8406 J/mg).Moreover, anthocyanin and non-anthocyanin polyphenols in PSP extract from optimized extraction temperature were identified using HPLC-DAD-ESI-MS2. In this work, the use of supercritical carbon dioxide, a nontoxic solvent, was proposed to extract bioactive compounds from Juglans regia L. green husk and was compared to other traditional techniques based on solvents such as ethanol, methanol and water. Supercritical CO2 was combined with ethanol as an organic modifier at a rate of 20% of the total flow to achieve greater extraction of polar compounds. The impact of supercritical carbon dioxide (SCCD) (10-60 MPa/45 °C/30 min) and subsequent 10 weeks storage at 4 °C on polyphenol oxidase (PPO), peroxidase (POD) activities, phenolic profile, vitamin C, sugars, physicochemical properties of cloudy apple juices was investigated. No significant changes in sugars and total polyphenols were observed, whereas significant degradation (≈28%) of vitamin C and individual polyphenols (≈18%) was noted after SCCD treatment. Ultrasound-Assisted Extraction, Centrifugation and Ultrafiltration: Multistage Process for Polyphenol Recovery from Purple Sweet Potatoes

This work provides an evaluation of an ultrasound-assisted, combined extraction, centrifugation and ultrafiltration process for the optimal recovery of polyphenols. A purple sweet potato (PSP) extract has been obtained using ultrasonic circulating extraction equipment at a power of 840 W, a frequency of 59 kHz and using water as solvent. Extract ultrafiltration, using polyethersulfone (PES), was carried out for the recovery of polyphenol, protein and anthocyanin. The aim of this study is evaluate either the antioxidant or pro-oxidant behaviour of some typical polyphenolic compounds of red wine, to investigate the influence of two different pH levels on the antioxidant properties and to clarify their activity–structure relationship. The antioxidant activity of compounds in hydrophilic solutions at pH 3.5 and pH 7.4 were measured by a competition kinetic test, based on the crocin bleaching. Influence of storage and in vitro gastrointestinal digestion on totqal antioxidant capacity of fruit beverages

Eight fruit beverages containing grape, orange and apricot, with/without iron and/or zinc and with/without milk added were analyzed for total antioxidant capacity (ORAC and TEAC methods), ascorbic acid content, and total polyphenols. The influence of cold storage (2-4 degrees C) during the product shelf-life (135 days) and antioxidant capacity after an in vitro gastrointestinal digestion were evaluated. Antioxidant capacity for all beverages together increased significantly (p < 0.05) at the end of storage (16.4% and 12.8% for ORAC and TEAC, respectively), whereas ascorbic acid remained stable. COMPARISON BETWEEN TWO TYPES OF WINEMAKING TANKS FOR THE PRODUCTION OF QUALITY WINES CV. NERO D’AVOLA

The aim of this work is to compare two types of winemaking tanks, horizontal and vertical, using Nero d’Avola grapes, in order to assess the capacity of extraction of phenolic compounds that determine the quality of red wines. The study shows that in wine made by horizontal winemaking tanks, both anthocyanins and polyphenols have a higher decrease in time compared to wine made by the vertical type. The higher values of polyphenols found in the horizontal type appear to show that wines produced by this type of winemaking tank have a better quality in terms of health for antimicrobial, antioxidant and antiinflammatory properties of these molecules.
