Transfer of Water and Volatiles at Interfaces: Application to Complex Food Systems
2013
International audience; During processing, storage and consumption, mass transfer of various small molecules (water, gases, flavour compounds or other solutes) occurs between the different phases in complex food products, or between complex food and its surroundings. These mass transfers can lead to physical or chemical changes and thus induce food quality modifications. The objective of this paper is to better understand the behaviour of small molecules at the interfaces, especially in model heterogeneous food systems. Different techniques have been designed to characterize mass transfers of these small molecules and their effects on food properties. In particular, techniques such as rotati…
Testing the assumptions of conditional handicap theory: costs and condition dependence of a sexually selected trait
2000
Conditional handicap models of sexual selection predict that sexual traits are reliable signals of male quality because they are (a) condition dependent and (b) costly to produce or maintain. In this study, my objective was to experimentally investigate whether the drumming of male Hygrolycosa rubrofasciata wolf spiders is a condition-dependent costly trait. Males court females by drumming dry leaves with their abdomen and females preferentially mate with males drumming at higher rates. I manipulated male phenotypic condition and drumming rate simultaneously by keeping males on three different food rations and either introducing or not introducing them to a female. Food ration treatment aff…
Association of Blattella germanica sensitization with atopic diseases in pediatric allergic patients
2011
The extent to which the sensitization to the German cockroach Blattella germanica (BG) affects onset/presence of rhinoconjunctivitis (RC) in children is unknown.
Proportional Venn diagram and determinants of allergic respiratory diseases in Italian adolescents
2011
Large variations in prevalence of atopy and allergic diseases are reported worldwide in children, but in epidemiological studies the use of skin prick tests (SPT) and spirometry along with questionnaires is not common in the Mediterranean Area. The present work was aimed at evaluating the prevalence of current asthma (CA), rhinoconjunctivitis (RC), and eczema (E), with atopy and respiratory function, and the role of risk factors for allergic respiratory diseases. A total of 2150 Italian schoolchildren were cross-sectionally investigated through respiratory questionnaire, SPT, and spirometry. A proportional Venn diagram quantified the distribution of CA, RC, and E, stratifying for allergic s…
Cypress pollen: An unexpected major sensitizing agent in different regions of Italy
2014
In this multicenter survey, we assessed the impact of sensitization to cypress in atopic patients in Italy and determined whether cypress pollen concentration changed over time.Allergists were required to collect the results of 100-200 consecutive skin prick tests (SPTs) performed during 2012. Seasonal symptoms were also recorded, as were airborne cypress pollen concentrations (data from the Italian Aerobiology Association) in 1998-2000 and 2010-2012.We examined 2258 atopic outpatients (56% females; age, 2-84 years) sensitized to at least 1 of the aeroallergens tested (Dermatophagoides species, grass, pellitory, olive, cypress, birch, Alternaria tenuis, and dog and cat dander). We found tha…
Development of an imaging system dedicated to the acquisition analysis and multispectral characterisation of skin lesion
2011
Visual evaluation of cutaneous lesions is the analysis the most commonly performedby dermatologists. This diagnostic is mainly done by naked eye and is based on criterionsuch as the size, shape, symmetry but principally on colour of the lesions. However, thisanalysis is subjective because it depends on the practician experience and the acquisitionconditions. We propose in this dissertation (1) the development of a multispectralcamera specifically dedicated for dermatological use. This device is based on a filterwheel composed of interferential filters and a neural network-based algorithm, generatinga hyperspectral cube of cutaneous data. This setting combines advantage of both spectrophotom…
Comparison of single-spot technique and RGB imaging for erythema index estimation
2016
A commercially available point measurement device, the Mexameter(®), and an experimental RGB imaging prototype device were used for erythema index estimation of 50 rosacea patients by analysing the level of skin redness on the forehead, both cheeks and both sides of a nose. Results are compared with Clinician's Erythema Assessment (CEA) values given by two dermatologists. The Mexameter uses 568 nm and 660 nm LEDs and a photodetector for estimation of erythema index, while the used prototype device acquired RGB images at 460 nm, 530 nm and 665 nm LED illumination. Several erythema index estimation algorithms were compared to determine which one gives the best contrast between increased eryth…
Alkylresorcinol Metabolites in Urine and Plasma as Potential Biomarkers of Rye and Wheat Fiber Consumption in Prostate Cancer Patients and Controls
2015
Alkylresorcinols (ARs) are phytochemicals mainly associated with rye/wheat bran. Plasma ARs and their plasma and urine metabolites are considered as biomarkers for whole-grain rye/wheat intake. However ARs metabolite day and night variations have not been studied in prostate cancer patients yet. We investigated ARs metabolites 3, 5-dihydroxy-benzoic acid (DHBA), and 3-(3, 5-dihydroxyphenyl)-1-propanoic acid (DHPPA) in urine and plasma in prostate cancer patients and in control group. DHPPA in 12-h overnight urine correlated with the intake of rye bread and bread fiber across short time periods (3 days). Plasma DHPPA concentration was significantly greater in the prostate cancer group than i…
Monotonous consumption of fibre-enriched bread at breakfast increases satiety and influences subsequent food intake
2012
Research report; International audience; This study aimed to observe the influence of the monotonous consumption of two types of fibre-enriched bread at breakfast on hedonic liking for the bread, subsequent hunger and energy intake. Two groups of unrestrained normal weight participants were given either white sandwich bread (WS) or multigrain sandwich bread (MG) at breakfast (the sensory properties of the WS were more similar to the usual bread eaten by the participants than those of the MG). In each group, two 15-day cross-over conditions were set up. During the experimental condition the usual breakfast of each participant was replaced by an isocaloric portion of plain bread (WS or MG). D…
