In-mouth aroma compound release during cheese consumption: Relationship with food bolus formation

International audience; The present study describes the changes in mechanical properties and saliva incorporation for cheese samples with different composition and texture, and their influence on the rate of aroma release. Chewing work per cycle, salivary flow rate and chewing rate varied highly among subjects. Despite the differences in cheese hardness, at the end of mastication, bolus texture was the same for cheeses with the same lipid content. Low-fat cheeses gave harder bolus than high fat ones, despite being chewed longer, with higher work per cycle and more moisture. This technique allows the capture of a complex image (i.e., one containing magnitude and phase), and the reconstruction of the phase and magnitude information. A statistical model for magnitudes and angles of wavelet frame coefficients and its application to texture retrieval

Abstract This paper presents a texture descriptor based on wavelet frame transforms. At each position in the image, and for each resolution level, we consider both vertical and horizontal wavelet detail coefficients as the components of a bivariate random vector. The magnitudes and angles of these vectors are computed. At each level the empirical histogram of magnitudes is modeled by a Generalized Gamma distribution, and the empirical histogram of angles is modeled by a different version of the von Mises distribution that accounts for histograms with 2 modes. Influence of soil properties on the aggregation of some Mediterranean soils and the use of aggregate size and stability as land degradation indicators

Abstract Soil aggregation in relation to other soil properties was studied along a climatological transect in the Southeast of Spain. Three sites were selected along this transect ranging from semiarid to subhumid climatological conditions. The aggregate size distribution, the macro and microaggregate stability of the superficial soil horizon and their relations with other soil properties were analysed. Large aggregates (>10, 10–5, 5–2 mm) were present in highest proportions in the most arid of the studied areas.
