Sensory and Chemical Analysis of Fractions Obtained by Gel Permeation of Water-Soluble Comte Cheese Extracts

The pure water extraction of Comte cheese solubles and their chromatographic separation facilitate sensory analysis experiments with the fractions directly collected from the column. Two extracts, one obtained after ultrafiltration, the other after chromatography on Sephadex G25, have been separated on Toyopearl HW-40S. The sensory evaluation of the obtained fractions shows in the two cases that some fractions have interesting flavors. However, physicochemical analysis shows that organoleptic characteristics are linked more to the presence of amino acids and salts than to the presence of peptides. Effect of pHand age of culture on cellular fatty acid composition of Leuconostoc oenos

The most abundant fatty acids were C18: 1w9, C19: 0 cy(w9,10) and C16:0, followed by C16: 1w9 and C14: 0. The pH considerably modified the fatty acid distribution in Lo107 (an acidophilic strain) and Lo8413 (a moderately acidophilic strain). The aim of this work was to investigate the potential use of non-conventional technologies (microwaves, ultrasounds, pulsed electric fields, and high voltage electrical discharges) to enhance the extraction of high-added value compounds (mainly stevioside and rebaudioside A), and antioxidants (total phenolic compounds, flavonoids, chlorophylls, and carotenoids), from Stevia rebaudiana leaves. Bacterial communities in Arctic fjelds of Finnish Lapland are stable but highly pH-dependent

The seasonal and spatial variations of microbial communities in Arctic fjelds of Finnish Lapland were studied. Phospholipid fatty acid analysis (PLFA) and terminal restriction fragment analysis (T-RFLP) of amplified 16S rRNA genes were used to assess the effect of soil conditions and vegetation on microbial community structures along different altitudes of two fjelds, Saana and Jehkas. Terminal restriction fragments were additionally analysed from c . 160 cloned sequences and isolated bacterial strains and matched with those of soil DNA samples. Metabolism of Linoleic Acid or Mevalonate and 6-Pentyl-α-Pyrone Biosynthesis by Trichoderma Species

The understanding of the biosynthetic pathway of 6-pentyl-α-pyrone in Trichoderma species was achieved by using labelled linoleic acid or mevalonate as a tracer. Incubation of growing cultures of Trichoderma harzianum and T. viride with [U- 14 C]linoleic acid or [5- 14 C]sodium mevalonate revealed that both fungal strains were able to incorporate these labelled compounds (50 and 15%, respectively). Most intracellular radioactivity was found in the neutral lipid fraction. At the initial time of incubation, the radioactivity from [ 14 C]linoleic acid was incorporated into 6-pentyl-α-pyrone more rapidly than that from [ 14 C]mevalonate. Lipid content of Saccharomyces cerevisiae strains with different degrees of ethanol tolerance

We analysed the fatty acid and sterol compositions of various Saccharomyces cerevisiae strains with ethanol tolerance varying from 4% to 12% (v/v) ethanol and at different concentrations of ethanol. The results we obtained agree with the existence of a relationship between membrane fluidity and ethanol tolerance but they do not support a direct role of unsaturated fatty acids in this tolerance. On the other hand, they support the importance of ergosterol in this phenomenon.

The effect of chemical treatment of stainless steel wire surfaces onZymomonas mobilis cell attachment and product synthesis

The attachment, growth and product synthesis of non-flocculating Zymomonas mobilis cells, fixed in stainless steel wire spheres (WS), were investigated. The carrier surface was activated by treatment with titanium (IV) chloride (TiCl 4 ) and γ-aminopropyltriethoxysilane (AS) in an attempt to raise the efficiency in the immobilization of the cells. In this work, an immobilization method for polymer-levan production by a non-flocculating Z mobilis culture was developed. The extent of cell attachment to the stainless steel wire surface, culture growth and product synthesis were described. It was established that during short-term passive immobilization of non-flocculating Z mobilis cells on a stainless steel wire surface, sufficient amounts of biomass for proper levan and ethanol fermentation could not be obtained. Stability of fatty acids and tocopherols during cold storage of human milk

The stability of fatty acids and tocopherols from human milk from 8 healthy lactating mothers was determined in fresh milk and after cold storage. Refrigeration at 4 °C for 48 h or freezing at −20 °C for 30 days did not significantly decrease fatty acid contents (mg per 100 g human milk), or concentrations of α-, β-, γ- and δ-tocopherol isomers, compared with fresh milk. Results obtained in the present study showed that cold storage under the usual storage conditions in neonatal units, at home or in milk banks did not have a detrimental effect upon fatty acids and tocopherols contents in human milk. Effect of iron and aeration on superoxide dismutase and catalase activity of PHB-producing Azotobacter chroococcum

Abstract The effect of aeration level and iron concentration on Azotobacter chroococcum 23 growth, PHB accumulation and antioxidative enzyme activities was investigated in shake flask experiments. Biomass yield and carbon source conversation coefficients increased in the presence of iron in the growth medium and under decreased aeration. The highest biomass production was observed for the culture grown in a medium with 36 μM of initial iron concentration and moderate aeration level.
