Underestimation of soil properties and poor understanding of soil conditions can have many negative consequences, which results in quality or quantity of yield, soil degradation or even environmental pollution. According to importance of agricultural practices, our study focused on their impact on soil quality and health. Cet article porte sur deux questions : sur la transposition de l’opposition conceptuelle plastique / figuratif de la dimension visuelle à celle du goût, et sur la passion qu’on appelle la nostalgie, considérée dans ses rapports avec les processus de figurativisation de l’expérience gustative et son évaluation par la critique gastronomique. Pour en traiter, nous nous appuyons notamment sur la reprise cinématographique du discours gastronomique proposée par un film d’animation intitulé Ratatouille, et en particulier sur la saisie esthétique que ce film met en scène.
