HALAL gaļas ražošana un tās eksports no Latvijas

2019

Alcoholic beverages, obesity, physical activity and other nutritional factors, and cancer risk: A review of the evidence

2016

International audience; Purpose: Prevention is a priority in the fight against cancers, especially nutritional prevention. To update the levels of evidence of relationships between 10 nutritional factors and cancer risk, the scientific literature published from 2006 to 2014 was reviewed by an expert group. Methods: Data from 133 meta-analyses, pooled analyses or intervention trials were examined. Nearly 150 relationships between nutritional factors and cancer at various sites were evaluated. Results: According to the evidence graded as convincing or probable, these factors were divided in two groups. Factors which increase the risk of cancer are alcoholic beverages, overweight and obesity, re…

Investigating the effect of meat products ingredients and reaction mechanisms for enchancing savory and toasted aromas in dry cured meat products

2023

Role of sodium nitrite on phospholipid composition of cooked cured ham. Relation to its flavor

1997

Abstract The role of sodium nitrite on phospholipid composition was studied during the processing of cooked cured ham. Evolution of the different classes of phospholipids in raw meat, cured meat with brine injected at 0, 50 and 100 mg of sodium nitrite/kg meat, and cooked meat, was determined as well as fatty acid content of phosphatidyl choline and phosphatidyl ethanolamine in raw and cooked meat. The major effect of sodium nitrite was observed on phosphatidyl ethanolamine whose content was significantly lowered in the presence of this salt. This effect was observed at the end of the curing process and was not modified by the cooking. The fatty acid content between raw meat and cooked cure…

Effect of the dam’s feeding regimen on the meat quality of light suckling lambs

2010

In order to verify the effect of the introduction of concentrates without GMO risk and at low aflatoxin risk in the diet of grazing milk ewes on the quanti-qualitative production of meat of their milk-fed light lambs, two trials were carried out - in Sicily, on 32 Comisana lambs, slaughtered at 49±4 days (trial 1); and in Sardinia, on 28 Sarda lambs, slaughtered at 31±4 days(trial 2) - comparing the following grazing dams’ feeding regimes: High stocking rate + Organic (barley – tickbean or pea) Concentrate (HO); High stocking rate + Conventional (maize-soybean) Concentrate (HC); Low stocking rate + Organic Concentrate (LO); Low stocking rate + Conventional Concentr…

Chemical and acidic composition of Longissimus dorsi muscle of Comisana lambs fed with Trifolium subterraneum and Lolium multiflorum

2010

Aim of this study was to evaluate the effects of grazing on Trifolium subterraneum and Lolium multiflorum, as pure or associated crops, on the chemical composition and on the fatty acid profile of the intramuscular lipids of the meat of lambs. Forty Comisana male lambs, on average weighing 13.75±1.90 kg, were divided into four homogenous groups of ten and called, in relation to the diet: group T those grazing on T. subterraneum; Group L on L. multiflorum; Group TL on adjacent monocultures of T. subterraneum and L. multiflorum (66.6 and 33.3% of surface, respectively); Group LT on adjacent monocultures of T. subterraneum and L. multiflorum (33.3 and 66.6% of surface, respectively). Eating patterns are associated with biomarkers in a selected population of university students and employees.

2011

AbstractThe association between diet and CVD cannot be assigned to a single nutrient, but rather to a set of nutrients and non-nutrients, and eating pattern analyses have become an important tool in investigation of this relationship. Our objective was to investigate eating patterns in relation to nutrient intake and serum concentration of folate, vitamin B12 and TAG in ninety-five healthy adult participants. Dietary information was collected by an FFQ, and eating patterns were obtained by principal components analyses of thirty-three food groups. Three eating patterns were extracted, a sweet eating pattern identified by intakes of cakes, snacks, sugar-sweetened drinks and chocolates; a pru…

First record of an established marbled crayfish Procambarus virginalis (Lyko, 2017) population in Estonia

2019

Invasive marbled crayfish Procambarus virginalis (Lyko, 2017) is spreading alarmingly fast across European countries and beyond. Early maturation, parthenogenetic reproduction mode and high growth rate contribute to a high potential invasiveness. Marbled crayfish can pose severe effects on native communities impacting the native crayfish populations being carrier of the crayfish plague disease caused by Aphanomyces astaci. Here we report the first record of marbled crayfish in Estonia. In total, 104 individuals were found in the artificially warm outflow channel of the cooling system of Balti Power Plant, entering to the water reservoir of the River Narva. Molecular analyses confirmed the m…

The wild boar (Sus scrofa, Linnaeus, 1758) as an important reservoir host for Alaria alata in the Baltic region and potential risk of infection in hu…

2020

Abstract Alaria alata trematode is widely distributed throughout Europe and has a complex life cycle in which wild boar serve as a reservoir host. The primary aims of the present study are to establish the occurrence of A. alata mesocercariae in naturally infected wild boar in Latvia and to assess the risk for humans to acquire A. alata infection via consumption of wild boar meat. By summarizing long-term data using the Trichinella inspection method from 2014 to 2019, the overall A. alata prevalence was 8.3%, of which significantly higher A. alata prevalence was observed during the summer seasons. Additionally, 43.9% (n = 485) of wild boar were found to be infected with A. alata using Alari…

Technological aspects of horse meat products – A review

2017

Abstract Horse meat and its products can be considered as a food with a high nutritional value. However, due to cases of economically motivated food adulteration by the intentional addition of horse meat beef products in recent years, horse meat has become a controversial issue. Consumer confidence in meat products and the meat industry has diminished, although consumers consider the differences between the food content and the label as the major issue rather than the safety and nutritional characteristics of horse meat. The elaboration of meat products from horse meat (e.g. “cecina”, dry-cured loin, salami, bressaola and pâte) is also an interesting alternative to other traditional meat pr…
