Oral processing and matrix composition affect aroma release and particle size distribution after consumption of coffee-creamer emulsions.

2016

International audience; Context and objectives: In humans, the main events that contribute to in-mouth emulsion breakdown are shear forces due to tongue movements and action of saliva. To date, most of the studies on the field were conducted on model emulsions and little is known about creamer emulsion and in particular hot coffee/creamer emulsions. In this context, the objective of the present work is to better understand how human oral physiology may govern the in-mouth breakdown of coffee-creamer beverages with consequence of food bolus structure and aroma release and to focus on saliva role and composition in particular. Methodology: The work was conducted on 7 coffee-creamer matrices d…

Contribution à la compréhension de l'influence des paramètres de formulation et de procédé sur la structure et les propriétés fonctionnelle de films …

2012

The aim of this study is the analysis of structure and transfer mechanisms through chitosan based food packaging materials with incorporated carvacrol as a model of antimicrobial active substance. Integration of composition parameters, structure, processing and drying of chitosan systems is correlated to its physico chemical and functional properties. Understanding and detailed analyses of processing parameters is crucial in production of active chitosan coatings applied on conventional materials such as polyethylene. So, the knowledge of composition and microstructure in association to environmental conditions, control the retention and the release kinetics of carvacrol from chitosan film.…

Frailty Status Improvement after 5-Month Multicomponent Program PROMUFRA in Community-Dwelling Older People: A Randomized Controlled Trial

2022

A study was made of the effect of the PROMUFRA multicomponent frailty program upon physical frailty, kinanthropometry, pain and muscle function parameters in frail and pre-frail community-dwelling older people. Eighty-one participants were randomly allocated to the intervention group (IG) or control group (CG). The IG performed PROMUFRA for 20 weeks, using six strength exercises with three series of 8–12 repetitions until muscular failure, and seven myofascial exercises, with one set of 10 repetitions. The CG continued their routine. The frailty criteria number (FCN), kinanthropometric parameters and muscle function were measured at baseline and after the program. Between-group differences …

Understanding physiological and physicochemical influences on in-mouth aroma release from yogurts using mechanistic modelling

2008

International audience; On the basis of a first mechanistic model predicting aroma release in the oropharynx during food consumption, the aim of the present work was to improve its accuracy and to use it to identify the main mechanisms responsible for in-mouth aroma release. Comparison between predicted release kinetics and the ones measured by APCI-MS in the nasal cavity of subjects eating flavoured yogurt highlighted the reasonably accurate time predictions of the relative aroma concentration in the nasal cavity and the model ability to simulate successive swallowing events as well as partial velopharyngeal closure. Parameters identified as the most influent for in-vivo aroma release were…

The Advances and Challenges of Liposome-Assisted Drug Release in the Presence of Serum Albumin Molecules: The Influence of Surrounding pH

2022

The aim of this study is to prepare a liposomal delivery system for 5-methyl-12 (H)-quino[3,4-b]-1,4-benzothiazine chloride (5-MBT) and study the in vitro release characteristics. The release of 5-MBT from a liposomal complex with human serum albumin (HSA) [LDPPC/5-MBT]:HSA was examined using the spectrophotometric method and differential scanning calorimetry (DSC). Electronic paramagnetic resonance was used to assess the influence of the pH of the environment on the conformation of phospholipids, the latter determining the degree of release of the encapsulated compound. The applied mathematical models made it possible to determine the necessary analytical parameters to facilitate the proce…

Aroma perception in dairy products: the roles of texture, aroma release and consumer physiology. A review

2011

Aroma perception is a determinant factor in food choices and acceptability by consumers. To be perceived, aroma compounds must be released in the mouth during food breakdown, transferred into the nasal cavity to reach the olfactory receptor and then be perceived. So, in order to control aroma perception, knowledge of the main factors that can influence in-mouth aroma release is of major importance. Focusing on dairy products, this review article investigates the factors due to: (i) food products, and mainly the influence of food composition and structure on aroma retention and release; (ii) the inter-individual variability of subjects, mainly chewing behaviour, saliva rate and composition a…

Biopolymer-Based Hybrid Hydrogels for Biomedical Applications: From Macroscopic to Nanosized Systems

2021

Generation of an Eosinophilotactic Factor from Human PMNs by Various Mechanisms of Cell Activation

1979

It is well established that an increase in the number of eosinophils both in tissue and in the circulation is a feature of many clinical conditions based on delayed (1,2) and immediate type hypersensitivity reactions (3,4). Since eosinophils have been recognised to exert specific killer function on parasites (5) and to be prominent participants at sites of inflammation, the mechanisms of their chemo-attraction are of major importance. In immediate type hypersensitivity reactions, eosinophils have been demonstrated to counteract the mediators of inflammation such as histamine (6), the SRS-A (7) and the platelet aggregating factor (8).

Separating efficacy and sedative effects of guanfacine extended release in children and adolescents with ADHD from four randomized, controlled, phase…

2016

IntroductionGuanfacine extended release (GXR) is a non-stimulant treatment for attention-deficit/hyperactivity disorder (ADHD).ObjectiveTo separate efficacy and sedative treatment-emergent adverse events (TEAEs) associated with GXR in four randomized, controlled trials in children (6–12 years) and adolescents (13–17 years) with ADHD.MethodsSPD503-301 (n = 345) and SPD503-304 (n = 324) were 8 and 9 week studies of fixed-dose GXR (≤ 4 mg/day). SPD503-312 (n = 314; adolescents only) and SPD503-316 (n = 338) were 10–13 week studies of dose-optimized GXR (1–7 mg/day).ResultsIn fixed-dose studies, pooled incidences of sedative TEAEs with GXR were highest at week 1 (GXR, 13.9–18.7%; placebo, 8.7%)…
