Gluten-free flours from cereals, pseudocereals and legumes: Phenolic fingerprints and in vitro antioxidant properties.

The interest in gluten-free (GF) products increases together with the increase in gluten-sensitive people. However, GF foods might have decreased nutritional quality as compared to the gluten containing counterparts. In this work, an investigation of the phenolic and antioxidant profile in 18 GF flours belonging to legumes, cereals and pseudocereals was achieved. Significant differences could be observed across samples. Total phenolic content was highest in violet rice flours, whereas total anthocyanins were highest in violet, nerone, and black rice flours. Rat liver microsomes which were induced either with ethanol or PB were incubated with NDMA or NMA. Formaldehyde generation and nitrite formation were measured as metabolic parameters for oxidative bioactivation and denitrosation, respectively. The influence of antiserum PB3a1 and PB22 containing antibodies against the corresponding cytochrome P-450 species on both metabolic functions was investigated. The results showed that the influence on formaldehyde production and denitrosation varied independently in that both parameters were either not affected, or influenced in an opposite way, or inhibited to a different degree. Resumen: En los primitivos documentos romances el posesivo solo aparece antepuesto al sustantivo (“(el) nuestro padre”). La posposicion (“padre nuestro”) se empieza a registrar en el siglo XIII en aragones y en dialecto navarro. Considerando principalmente la documentacion de esta segunda variedad, el presente trabajo tiene como objetivo determinar el modo en que el posesivo adquirio la capacidad de aparecer pospuesto. Este cambio se vio impulsado por factores de naturaleza estructural. According to the current state of research on the phenomenon of biophilia, the positive influence of nature's elements on humans has long been widely understood. Since the negative impact of urbanised areas on quality of life was noticed, human-friendly architecture has been redefined, where the physical and mental well-being of people using buildings, remains highly dependent on their contact with the environment.
