Publisher Summary Recent experiments using glass microelectrodes have demonstrated that very low tissue pH-values are prevalent in C3H mouse mammary carcinomas. The acidification of the tumor tissue is the result of an elevated lactic acid production and its inadequate removal. As a consequence of heterogeneities in tumor blood flow and in substrate supply, tissue pH values are distributed heterogeneously within solid tumors. Pentamidine (Pent), an antiparasitic drug used for the treatment of visceral leishmaniasis, has been modified with terminal azide groups and conjugated to two different polymer backbones (PLGA-PEG [PP] copolymer and hyaluronic acid [HA]) armed with alkyne end-groups. The conjugation has been performed by Copper Catalyzed Azido Alkyne Cycloaddition (CuAAC) using CuSO4/sodium ascorbate as metal source. Monitoring biomarkers during preseason preparation period in professional soccer players

Aim. The present study aimed at investigating the effect of a 3-week experimental intervention on biomarkers in professional soccer players during the preseason preparation-period. Methods. Eight participants (age 22.5±2.2 yrs) were enrolled in the study. Lactic Acid Bacteria in Spanish Red Rose and White Musts and Wines under Cellar Conditions

The dynamics of the lactic acid bacterial (LAB) population in different cellars, fermentation conditions and musts were analyzed. The number of LAB in fresh musts diminished quickly in the first few days, but an increase of these bacteria occurred during the later stages of the alcoholic fermentation. The species found in fresh musts were Lactobacillus plantarum, L. hilgardii, L. brevis, L. confusus, and Leuc. onostoc paramesenteroides. At the end of fermentation only L. hilgardii, Leuc. oenos and L. fructivorans were isolated. The API 50 CHL system was not useful to identify strains of Leuc. oenos species. On the basis of a previous research, it seems that foil-wrapped tray solutions are not particularly chosen by lactic acid cheese consumers. With relation to this study, almost half of the respondent population would have expressed the desire of different packages. Parchment packages and poly(ethylene-co-vinyl acetate)/polyvinylidene chloride/poly(ethylene-co-vinyl acetate) laminates would be removed by 25.0 and 12.5% of customers, respectively. In order to design biopolymeric matrices entrapping bioprotective lactic acid bacteria (LAB) to control undesirable microorganisms growth in foods, the performances of alginate and alginate-caseinate (an aqueous two-phase system) matrices entrapping Lactococcus lactis subsp. lactis LAB3 cells were compared. Since efficient matrices should preserve the culturability and the antimicrobial activity of entrapped LAB3 cells for prolonged periods, they were both monitored for 12 days storage at 30 °C. Chitosan films for the microbiological preservation of refrigerated sole and hake fillets

The effect of chitosan films for shelf-life extension of fresh fillets of hake (Merluccius merluccius) and sole (Solea solea) was evaluated over a 15-day storage at 4 ± 1 °C. Fish fillets wrapped in a chitosan matrix were individually packaged in air (AP) and under vacuum (VP). Microbiological analyses (total aerobic mesophilic bacteria, Pseudomonas, H2S-producing bacteria, lactic acid bacteria, Enterobacteriaceae and Listeria monocytogenes were carried out during the shelf-life. The anaerobic metabolism of citrate, fumarate, gluconate, malate, 2-oxoglutarate and pyruvate by 137 strains of 23 species of lactic acid bacteria was investigated. The bacteria were from various sources (plant material, meat and dairy products, dough and wine) and belonged to the genera Lactobacillus, Leuconostoc, Pediococcus, and Streptococcus. The ability of metabolize the acids was determined by thin layer chromatography or by enzymatic analysis after growth of the strains in a glucose-containing medium.
