Transcriptomic and proteomic insights of the wine yeast biomass propagation process

Transcriptome and proteome profiles have been established for the commercial wine yeast strain T73 during an important industrial process: yeast biomass propagation. The data from both analyses reveal that the metabolic transition from fermentation to respiration is the most critical step in biomass propagation. We identified 177 ORFs and 56 proteins among those most expressed during the process, thus highlighting cell stress response, mitochondrial and carbohydrate metabolism as the most represented functional categories. Compared with the variety of carbohydrates in plants, relatively few sugars or sugar derivatives are regularly found in animals either free or as components of more complex compounds. However, it is possible that sugars originating from plants in the diet are transiently retained in animals and distort the normal sugar spectrum. Effects of protein on retention of ADH enzyme activity encapsulated in trehalose matrices by spray drying

The retention of the enzymatic activity of alcohol dehydrogenase (ADH) on spray drying was examined under various drying conditions. Trehalose was used in the formulation of feed stocks for the spray drying. The retention of ADH activity was dependent on the concentration of ADH in the feed solution. The addition of other proteins, such as bovine serum albumin and β-lactoglobulin, exhibited an additional improvement of the retention of ADH activity. The inlet and outlet temperature of the drying air was another key factor for the enzyme activity on the spray drying. The surface morphology of the spray-dried particle was changed drastically with the addition of proteins.

Abstract The ontogenesis of isozyme patterns of alcohol dehydrogenase (ADH), glycerol‐3‐phosphate dehydrogenase (α‐GPDH), lactate dehydrogenase (LDH), malate dehydrogenase (MDH), glucose‐6‐phosphate dehydrogenase (G‐6‐PD) and glucosephosphate isomer‐ase (GPI) in Dicentrarchus labrax was studied. ADH is active only in the liver of the adult; a‐GPDH is active in only two tissues in the adult: the A2 isozyme in white skeletal muscle and the B2 isozyme in the liver. Differential gene expression was found only for LDH, MDH and GPI, which have polymeric structure.
