Matching beer with food : pairing principles, underlying mechanisms and a focus on aromatic similarity

Pairing between beer and dishes emerges as a new trend in France. Beer promoters or gastronomy professionals need to offer high-quality advices in terms of beer and food pairing to their customers. Within this context, the objective of the research was to identify pairing principles and to better understand the underlying perceptual mechanisms. Determinants of food and beverage pairing were first analysed from experts’ discourses. Results showed that food and beverage pairings are governed by perceptual, conceptual and affective features, related to physio-chemical, perceptual and cognitive processes. Despite important advances made in recent decades, women are still underrepresented in science (less than 30% of authorships). This study presents a bibliometric analysis of all the Psychology articles published in 2009 included in the Web of Science database (Thomson Reuters) in order to examine the contribution of women in contemporary Psychology, their pattern of research collaboration, the scientific content and the scientific impact from a gender perspective. From a total of 90,067 authorships, gender could be identified in 74,413 (82.6%) of them, being 40,782 (54.8%) male authorships and 33,631 (45.2%) female authorships. Critical end point behaviour in a binary fluid mixture

We consider the liquid-gas phase boundary in a binary fluid mixture near its critical end point. Using general scaling arguments we show that the diameter of the liquid-gas coexistence curve exhibits singular behaviour as the critical end point is approached. This prediction is tested by means of extensive Monte-Carlo simulations of a symmetrical Lennard-Jones binary mixture within the grand canonical ensemble. The simulation results show clear evidence for the proposed singularity, as well as confirming a previously predicted singularity in the coexistence chemical potential [Fisher and Upton, Phys. Rev. Regulation of Na(+)-dependent glutamate transport was studied in isolated luminal and abluminal plasma membranes derived from the bovine blood-brain barrier. Abluminal membranes have Na(+)-dependent glutamate transporters while luminal membranes have facilitative transporters. This organization allows glutamate to be actively removed from brain. gamma-Glutamyl transpeptidase, the first enzyme of the gamma-glutamyl cycle (GGC), is on the luminal membrane. Robust control of anterior-posterior axial patterning during regeneration is mediated by bioelectric signaling. However, a number of systems-level properties of bioelectrochemical circuits, including stochastic outcomes such as seen in permanently de-stabilized "cryptic" flatworms, are not completely understood. NONSINGULAR BLACK HOLES IN PALATINI EXTENSIONS OF GENERAL RELATIVITY

An introduction to extended theories of gravity formulated in metric-affine (or Palatini) spaces is presented. Focusing on spherically symmetric configurations with electric fields, we will see that in these theories the central singularity present in General Relativity is generically replaced by a wormhole structure. The resulting space-time becomes geodesically complete and, therefore, can be regarded as non-singular. We illustrate these properties considering two different models, namely, a quadratic f(R) theory and a Born-Infeld like gravity theory.
Conformation-specific blockade of the integrin GPIIb/IIIa: a novel antiplatelet strategy that selectively targets activated platelets.

Platelet activation causes conformational changes of integrin GPIIb/IIIa (α IIb β 3 ), resulting in the exposure of its ligand-binding pocket. This provides the unique possibility to design agents that specifically block activated platelets only. We used phage display of single-chain antibody (scFv) libraries in combination with several rounds of depletion/selection to obtain human scFvs that bind specifically to the activated conformation of GPIIb/IIIa. Dipole Moments and the Direction of the Transition Dipole Moment of Some Intramolecular Exciplexes

The dipole moments of some intramolecular exciplex systems have been determined from the effect of an electric field on their fluorescence and are compared to those estimated from solvent shift measurements. The charge transfer between the donor and acceptor subunits is between 0.6 and 0.9 of a full charge transfer. The face-to-face type exciplexes show considerable deviations from the general behaviour what might be due to some admixture of locally excited configurations to the exciplex wave function, in this way reducing the dipole moment values and changing the direction of the transition dipole moment.
