Determination of taste-active compounds of a bitter camembert cheese by omission tests

The taste-active compounds of a Camembert cheese selected for its intense bitterness defect were investigated. The water-soluble fraction (WSE) was extracted with pure water and fractionated by successive tangential ultrafiltrations and nanofiltration. The physicochemical assessment of these fractions led to the construction of a model WSE which was compared by sensory evaluation to the crude water-soluble extract, using a panel of 16 trained tasters. As no significant difference was perceived, this model WSE was then used directly or mixed with other cheese components for omission tests. Summary - In cheese, flavour and taste are, in great part, generated by the starters during the ripening stage. Proteolysis and lipolysis are the first steps of the elaboration of a large number of taste and odour compounds directly invol ved in the sensory quality of cheeses. The pathways used by the microorganisms to produce flavour compounds are still unclear in many cases. The purpose of this article is to derive the logical but unexpected consequences in terms of social justice, of the presuppositions on utopian constructions. In the conditions generally in effect in urban utopias which lay claim to a certain amount of social justice combining equality, fairness and liberty in different ways, equality is likely to interfere with liberty, even create inequalities, and liberty can adapt to inequalities, perhaps even create losses of liberty. The French criminal law is characterised by a willingness to prevent recidivism. To give concrete expression to this will, security measures are implemented among which the secure detention. However, the secure detention is not an ordinary measure and gives rises to many debates which, in fact, take up old and recurrent controversies. This measure is based on the assumption that sexual and/or violent criminals show a disease which may suggest a risk of a second offence.
