Characterization of kefir-like beverages produced from vegetable juices

The aim of this work was to develop new non-dairy fermented beverages using vegetable juices as fermentable substrates. Carrot, fennel, melon, onion, tomato and strawberry juices underwent back-slopping fermentations, carried out by water kefir microorganisms. Results indicated that lactic acid bacteria and yeasts were capable of growing in the juices tested. Melon juice registered the highest numbers of microorganisms. Almost all juices underwent a lactic fermentation. After fermentation, there was observance of a decrease of the soluble solid content and an increase of the number of volatile organic compounds. Final berry mass, a major quality factor in wine production, is determined by the integrated effect of biotic and abiotic factors that can also influence berry composition. Berry characterisation of cv shiraz according to position on the rachis

In this study, characterisation of the physical and compositional parameters of berries located in different positions on the rachis of Shiraz/R99 bunches was done. Berries were divided according to position on the rachis (apical, median and basal) and berry weight, resulting in four berry weight classes, averaging 0.86 g, 1.29 g, 1.74 g and 2.26 g and 0.74, 1.18, 1.59 and 2.09 cm3, respectively. The berries were analysed individually. The fresh weight of the berries comprised approximately 4% seeds, 20% skin and 76% flesh. The effect of low frequency noise on the behaviour of juvenile Sparus aurata.

To date, few studies have been undertaken to investigate the effects of different noise frequencies on the behaviour of juvenile fish. In this study, the behavioural changes of juvenile gilthead seabream (Sparus aurata) are evaluated when exposed to white noise filtered in third-octave bands centred at 63, 125, 500, and 1000 Hz (sound pressure level, 140-150 dB re 1 mu& x3a1;a) for 7 h. [EN] This research deals with two insectivorous reedbed-nesting songbirds, the Savi's Warbler Locustella luscinioides and the Great Reed Warbler Acrocephalus arundinaceus breeding at the Marjal de Pego-Oliva (Valencia-Alicante, Spain). Our aims were to study the diet and the prey selection of the two species and to assess the dietary differences between them. A microbiological, physicochemical, and texture study during storage of yoghurt produced under isostatic pressure

Abstract This work aimed to study refrigeration storage (4 °C for 23 days) of yoghurt produced at 43 °C under sub-lethal high pressure, at 10, 20, 30 and 40 MPa, in comparison with the fermentation process at atmospheric pressure (0.1 MPa). Lactic acid bacteria (S. thermophilus and L. bulgaricus, LAB) and quality parameters like pH, titratable acidity, syneresis and colour were evaluated, along with textural analyses to infer how pressure would impact the obtained yoghurt along storage.
