The approach lies on the development of an original DNA biosensor. This self-assembled DNA biochip is constituted of a tethered lipid membrane presenting « protein/DNA » complexes. This unique assembly, using a highly flexible bifunctional molecular spacer and a fluidic matrix, allows the control of oligonucleotides surface density and their mobility thus favouring hybridization of the DNA probes in liquid environment and under weak constraints. Changes in properties of palm sugar syrup produced by an open pan and a vacuum evaporator during storage

International audience; The aim of this study was to monitor the changes in the properties of palm sugar syrup produced by an open pan and a vacuum evaporator at 70°C and 80°C during storage under 4°C and room temperature (30°C) for 12 months at monthly intervals. During storage, Maillard reaction took place in samples stored under 4°C lower than those stored under 30°C. This was shown by lower a* values, intermediate browning products (IBP), browning intensity (BI) and HMF content, and higher L* values, fructose, glucose and free amino group contents during storage for 12 months. Using specific polyclonal antibodies to study the malolactic enzyme from Leuconostoc oenos and other lactic acid bacteria.

Specific polyclonal antibodies directed against the malolactic enzyme of Leuconostoc oenos were obtained. Despite the homologies between the malolactic enzymes from Leuc. oenos and Lactococcus lactis, no immunological relationship was detected with the L. lactis malolactic enzyme, suggesting differences in their structural organization. The use of the antiserum also demonstrated that the problem of heterologous expression occurring in the recombinant Escherichia coli strain (Labarre et al. 1996a) resulted in a low synthesis of the malolactic enzyme from Leuc. oenos. Moreover, a small amount of the protein was found to be peripherally associated to the membrane of Leuc. oenos.
