Response surface methodology was used to evaluate the optimal high pressure processing treatment (300-500 MPa, 5-15 min) combined with Stevia rebaudiana (Stevia) addition (0-2.5% (w/v)) to guarantee food safety while maintaining maximum retention of nutritional properties. A fruit extract matrix was selected and Listeria monocytogenes inactivation was followed from the food safety point of view while polyphenoloxidase (PPO) and peroxidase (POD) activities, total phenolic content (TPC) and antioxidant capacity (TEAC and ORAC) were studied from the food quality point of view. The effect of explant cut and cytokinin type on micropropagation of fig (Ficus carica L.) 'Brown Turkey'

This study was conducted to micropropagate 'Brown Turkey' fig, one of the most popular cultivars in California, USA for fresh and dried uses. Nodal segments cut lengthwise or not were cultured on Woody Plant Medium containing 0.3, 1.0 or 3.0 μM of N6 benzyladenine (BA) or kinetin in a 3 (concentrations) × 2 (cytokinins) × 2 (explant types) factorial experiment. 60% of explants became contaminated with various microbes when the standard protocol of washing shoots for 3 h under running tap water. Microbial contamination was nearly eliminated when the running water rinse and the use of an ascorbic acid dip were eliminated. Phenolic exudation was not a problem. La papaya è una pianta erbacea diffusa nelle regioni tropicali e subtropicali e, nell’ultimo decennio, anche in Sicilia dove viene coltivata esclusivamente in serra. L’obiettivo del seguente lavoro è stato quello di valutare dal punto di vista qualitativo 5 varietà di papaya, originate da seme, coltivate in ambiente protetto. La raccolta dei frutti è stata effettuata utilizzando come indice di maturazione il colore dei frutti.
