Fermentation at non-conventional conditions in food- and bio-sciences by the application of advanced processing technologies
2017
The interest in improving the yield and productivity values of relevant microbial fermentations is an increasingly important issue for the scientific community. Therefore, several strategies have been tested for the stimulation of microbial growth and manipulation of their metabolic behavior. One promising approach involves the performance of fermentative processes during non-conventional conditions, which includes high pressure (HP), electric fields (EF) and ultrasound (US). These advanced technologies are usually applied for microbial inactivation in the context of food processing. However, the approach described in this study focuses on the use of these technologies at sub-lethal levels,…
Novel Thermal Technologies and Fermentation
2016
Fermentation is one of the oldest methods practiced by human beings for the transformation of some food products in order to extend shelf-life and provide novel organoleptic properties. Moreover, during fermentation a high amount of valuable compounds with important commercial benefits are produced. Therefore, there is a need to develop energy efficient and environmental-friendly sustainable processes in order to improve fermentation-related processes. Traditionally, conventional thermal treatments have been used in food fermentation; however, the organoleptic properties of the treated products can be altered. As a result, alternative approaches have been sought by food industries in order …
Wine Aroma Concentration by Using a General Purpose simulator (ProSim)
1995
In this work is proposed the application of the ProSim process simulator for the analysis of wine aroma concentration by performing a two-level simulation: First, ProSim is used to attain a preliminary design of a distillation tower, and afterward the simulator is employed to analyze the behavior of the tower in a more precise way. The UNIFAC model was used for nonideal behavior description of the mixtures. In this application, the concentration of a 13-compound mixture was simulated. In fact, the numerical methods implemented in ProSim made it possible to attain the convergence quickly even with minor compounds. The results obtained showed that the use of ProSim results to be very advanta…
A nondestructive intelligent approach to real‐time evaluation of chicken meat freshness based on computer vision technique
2019
In this study, the capability of a procedure based on combination of computer vision (CV) and artificial intelligence techniques examined for intelligent and nondestructive prediction of chicken meat freshness during the spoilage process at 4°C. The proposed system comprises the following stages: capture images, image preprocessing, image processing, computing channels, feature extraction, feature selection by a hybrid of genetic algorithm (GA) and artificial neuronal network (ANN), and prediction by using ANN. The number of neurons in input layer was determined 33 (selected features) and freshness used as the output. The ideal ANN model was obtained with 33‐10‐1 topology. The high performa…
Electrotechnologies applied to valorization of by-products from food industry: Main findings, energy and economic cost of their industrialization
2016
Abstract There has been a growing interest to reuse food waste and by-products from different processing steps, not only to ensure the environmental sustainability but also to improve the economic performance of the processes. One way of recovery that has raised more interest is the extraction of valuable compounds, which can be used as ingredients in food and pharmaceutical industries due to their technological function, nutritional properties, or their beneficial effects on human or animal health. In many cases, conventional solvent extraction cannot be economically feasible or involves the use of toxic solvents, hindering their subsequent management, or high temperatures, with consequent…
Innovative technologies for encapsulation of Mediterranean plants extracts
2017
Abstract Background High-added value biological compounds (BACs) from herbal and plant sources, such as essential oils (EO), antioxidants and volatile compounds, often exhibit remarkable features, ranging from nutritive and medicinal properties, as well as antimicrobial and antioxidant activities, which can be exploited in the production of functional foods. However, most BACs exhibit low water solubility, strong off-flavors/odors, and are generally unstable and easily degraded under common processing and storage conditions. Encapsulation is a technology that enables the delivery in food systems, the protection, as well as the controlled and targeted release of BACs. Scope and approach The …
Parameter identification and state estimation of a microalgae dynamical model in sulphur deprived conditions: Global sensitivity analysis, optimizati…
2014
International audience; In this article, a dynamic model describing the growth of the green microalgae Chlamydomonas reinhardtii , under light attenuation and sulphur‐deprived conditions leading to hydrogen production in a photobioreactor is presented. The strong interactions between biological and physical phenomena require complex mathematical expressions with an important number of parameters. This article presents a global identification procedure in three steps using data from batch experiments. First, it includes the application of a sensitivity function analysis, which allows one to determine the parameters having the greatest influence on model outputs. Secondly, the most influentia…

MAB2.0 project: Integrating algae production into wastewater treatment
2018
Abstract Different species of microalgae are highly efficient in removing nutrients from wastewater streams and are able to grow using flue gas as a CO2 source. These features indicate that application of microalgae has a promising outlook in wastewater treatment. However, practical aspects and process of integration of algae cultivation into an existing wastewater treatment line have not been investigated. The Climate-KIC co-funded Microalgae Biorefinery 2.0 project developed and demonstrated this integration process through a case study. The purpose of this paper is to introduce this process by phases and protocols, as well as report on the challenges and bottlenecks identified in the cas…
Anaerobic degradation of 2-propanol: Laboratory and pilot-scale studies
2017
Abstract The anaerobic degradation of 2-propanol, an important industrial solvent, was scaled-up from batch assays to a pilot expanded granular sludge bed (EGSB) reactor at 25 °C. Batch studies indicated that 2-propanol followed Haldane kinetics, with a maximum rate at 10 g COD L −1 . Concentrations as high as 25 g COD L −1 did not inhibit the degradation of ethanol, a common co-solvent. Similar specific methanogenic activities (SMA) were obtained for water-solvent and water-brewery sludges (88 and 77 ml CH 4 g-VS −1 d −1 at 5 g COD L −1 ). Continuous degradation showed a lag-phase of three weeks with water-brewery sludge. Increases in 2-propanol load from 0.05 to 0.18 kg COD kg-VS −1 d …
