Consumers’ food decisions are based on the information they receive and on their own individual characteristics. This paper is based on an experiment using experimental economics and sensory evaluation to measure individual characteristics of participants and to analyze the impact of nutritional information relative to orange juice. The aim is to explore the potential link between specific characteristics (risk aversion, time preference) and the reactions of consumers to nutritional information. The experimental economic incentive methods allows to make up for hypothetical bias which can affect purely declarative methods. This chapter analyzes the philosophical implications related to the “position of vulnerability” defined by the Directive 2011/36/EU on Preventing and Combating Trafficking in Human Beings and Protecting its Victims as “a situation in which the person concerned has no real or acceptable alternative but to submit to the abuse involved” (art. 2.2). In particular, the chapter focuses on the “choice” made by migrant women employed in care and domestic work and in the agricultural sector in Italy.
