Enhancement of structural, functional and antioxidant properties of fish gelatin films using Maillard reactions

International audience; This study investigates the effect of Maillard reactions (MR) on the physico-chemical and biological properties of fish gelatin based edible films. Glucose was incorporated in gelatin film forming solutions at different glucose/lysine molar ratios: 0.5/1.0, 1.0/1.0 and 5.0/1.0. The MR was then induced by heating films at 90 °C for 24 h in dry conditions. Color changes and browning index measurements were used to pursue the MR kinetic. Halloysite Nanotubes Coated by Chitosan for the Controlled Release of Khellin

In this work, we have developed a novel strategy to prepare hybrid nanostructures with controlled release properties towards khellin by exploiting the electrostatic interactions between chitosan and halloysite nanotubes (HNT). Firstly, khellin was loaded into the HNT lumen by the vacuum-assisted procedure. The drug confinement within the halloysite cavity has been proved by water contact angle experiments on the HNT/khellin tablets. Evaluation of a lattice-Boltzmann method for mercury intrusion porosimetry simulations

We have simulated intrusion of a non-wetting liquid into pores of varying shape and size. Simulations were based on the lattice-Boltzmann method and the Shan–Chen multiphase model. The liquid–solid contact angle for pores with circular cross-section was found to be equal to that for pores with square cross-section, and constant even for small pore sizes if the discretised shape of the circular cross-section was taken into account. For comparison, contact angle was also determined for a liquid column descending in a capillary tube, and the results were found to be consistent. Application of the method to mercury intrusion porosimetry is discussed.
Surface modification of poly(ethylene-co-acrylic acid) with amino-functionalized silica nanoparticles

In this work we studied the possibility to achieve a hybrid-surface through the modification, via a facile wet chemical process, of the surface of films of poly(ethylene-co-acrylic acid) (EAA) with amino-modified silica nanoparticles. Films of EAA were preliminarily activated by the introduction of -COCl groups on their surface. Silica nanoparticles were thereafter covalently bound on the polymeric surface as confirmed by FTIR, ATR-FTIR, XPS, NMR and SEM determinations. Effect of oil lamination between plasticized starch layers on film properties

International audience; To reduce the hygroscopic character of biodegradable starch-based films, rapeseed oil was incorporated by lamination (starch-oil-starch 3-layers technique). The lipid lamination followed by starch solution casting step induced an emulsion type structure of dried films. Composite films are more opalescent and glossier than fatty free starch films. For all the films, structure is heterogeneous in the cross-section only. Adding fat induced a twice decrease of the tensile strength.
