Application of porcini mushroom ( Boletus edulis ) to improve the quality of frankfurters

The antioxidant and antimicrobial properties of Boletus edulis decoction and the effect of mushroom addition on the physicochemical and microbiological properties of frankfurters during refrigerated storage were studied. The addition of mushroom delayed the increase in the total number of aerobic mesophilic microorganisms during the storage. The incorporation of B. edulis in cooked sausages resulted in the significantly higher hardness of frankfurters in comparison with control, during chilled storage. Evaluation of taste compounds in water-soluble extract of goat cheeses

Abstract The water-soluble fractions of two goat cheeses — one denomination of origin commercial trade mark (crottin de Chavignol®) and one bought in a local cheese making establishment (Bouton de culotte®) — containing many taste and flavour molecules were studied. Ultrafiltration with a 1000 Da threshold membrane, followed by gel filtration on Toyopearl HW-40S gel using water as eluent, led to the production of edible fractions. Physicochemical and sensory analysis of these fractions showed that the most tasty fractions contained, essentially, the free amino acids and mineral salts. The chemical composition of the aerial parts essential oil of Lonas annua (L.) Vines & Druce (Asteraceae)

Lonas annua (L.) Vines & Druce (Asteraceae), commonly known as African Daisy or Yellow Ageratum is a rare therophyte native to northwestern Africa (Algeria, Morocco, and Tunisia) and Italy (Sicily and Sardinia). In the present study, the chemical composition of the essential oil from aerial parts of Lonas annua was analyzed by GC-MS. No one report has been previously published on the essential oil of this species. The results showed the presence of large quantity of two unusual metabolites 2,3-dihydrofarnesol (41.64%), and acenaphthene (36.18%). Chemotaxonomic considerations were carried out in order to confirm the phylogenetic reconstructions of Anthemideae.

Economists and Eugenics: Progressive Era Racism and its (Jewish) Discontents

This chapter analyzes the contribution to the debates on labor and immigration of a group of Jewish academicians and reformers who, during the second half of the Progressive Era, explicitly took a stance against the racialist and eugenic rhetoric of the period. This group includes first-rank economists like Edwin R. A. Seligman, Jacob H. Hollander, and Emanuel A. Goldenweiser; influential field specialists such as Isaac A. Hourwich and Isaac M. Rubinow; and relatively less known figures like Max J. Kohler and Samuel K. Joseph. By focusing on the voices of these dissenters, this chapter enriches the emerging picture of Progressive Era eugenic and racial thought.
