The effect of the addition of galactooligosaccharides (GOS) on sterol bioaccessibility in three plant sterol (PS)-enriched milk-based fruit beverages (without GOS addition (MfB) and with 2.5 g (MfB-G2) and 5.0 g (MfB-G5) GOS per 250 mL) was evaluated after micellar gastrointestinal digestion. Cholesterol bioaccessibility was very similar among beverages, though a slight significant increase (from 80% to 85%) was observed by the addition of 5.0 g GOS. AbstractThe present work aimed to investigate the main quality attributes that influence the purchase decisions of fresh berries. To this regard, an empirical survey has been conducted by interviewing 200 consumers of fresh berries at the exit of the main centers of the large scale retail trade in the city of Munich (Germany). An econometric model has been adopted to examine the relationship that single attributes has on the purchase frequency of fresh berries. Results showed that nutraceutical properties and health benefits of berries have a strong appeal to the consumers and confirmed that intrinsic attributes are determinants of consumer purchase decision

Selenium is an essential trace element and micronutrient for human health. Application of organic selenium in plants and microorganisms as trace element supplement is attracting more and more attention. In this study, Bacillus cereus, an important probiotic, was used for selenium enrichment with sodium selenite as selenium source. The growth curve of B. cereus was investigated, and 150 μg/ml was selected as the concentration of selenium for B. cereus fermentation. After ingestion, glucosinolates could be partially absorbed in their intact form through the gastrointestinal mucosa. However, the largest fraction is metabolized in the gut lumen.
