Preliminary evaluation of durum wheat (Triticum Turgidum Subsp Durum) during malting process:

Durum (T. turgidum subsp. durum) wheat production worldwide is substantially less than that of common wheat (Triticum aestivum) mainly due to the relatively limited end-users. In order to evaluate malting and brewing suitability, sixteen old durum wheat landraces were malted at micro scale. Results show malt quality parameters in the range 78.2–85.9% for the extract, 72.9–80.9% for the fermentability, 3–5 EBC units for the colour, 0.49–0.79% dm for water-extractable arabinoxylans and 0.043–0.059% dm for the β-glucans. Shelf life assessment of industrial durum wheat bread as a function of packaging system

This study compared the effect of different packaging systems on industrial durum wheat bread shelf-life, with regard to thermoformed packaging (TF) and flow-packaging (FP). Two TFs having different thickness and one FP were compared by assessing physico-chemical and sensorial properties and volatile compounds of sliced bread during 90 days of storage. Texture, aw and bread moisture varied according to a first-order kinetic model, with FP samples ageing faster than TFs. Sensorial features such as consistency, stale odor, and sour odor, increased their intensity during storage. Furans decreased, whereas hexanal increased. Abstract The aim of this study is to develop a framework for the evaluation of no-till (NT) yield success probability as a decision tool for farmers or decision makers. The effect of soil management on durum wheat yield has been tested on many long-term field experiments. Anche nel 2020-21, pur nelle difficili circostanze determinate per il secondo anno consecutivo dalla pandemia da Covid-19, sono state condotte in Sicilia le prove della Rete nazionale di confronto varietale di frumento duro. I campi sperimentali sono stati allestiti in 5 ambienti siciliani. La sperimentazione ha riguardato 30 varieta’, di cui ben 9 al primo anno di valutazione. Nonostante le difficoltà operative dovute alla pandemia da Covid-19, anche nel corso del 2019-20 sono state condotte in Sicilia le prove di confronto varietale di frumento duro, allestite in 5 località della Sicilia: Libertinia (Catania), Catania, S. Stefano Quisquina (Agrigento), Caltagirone (Catania) e Ciminna (Palermo). La sperimentazione ha riguardato 30 varietà, di cui 5 al primo anno di valutazione, 9 cultivar al secondo anno di prova e 16 genotipi testati da oltre due anni. Grano duro biologico: i consigli varietali.

Nell’annata agraria 2018-19, per il 17° anno consecutivo, sono state effettuate prove collegiali di confronto tra varietà di frumento duro in coltura biologica, in collaborazione con diverse Istituzioni. Le prove sono state realizzate in 7 località, dislocate in 6 regioni del Centro-Sud (Sicilia, Sardegna, Puglia, Toscana e Marche), utilizzando uno schema sperimentale a blocchi randomizzati con 3 o 4 ripetizioni. Nelle prove del 17° anno di sperimentazione varietale nazionale sul frumento duro in coltivazione biologica, tra le 19 varietà valutate in 7 campi di prova sono da evidenziare i risultati delle varietà Antalis ed Egeo che alla buona e stabile produzione hanno associato anche un tenore proteico e un peso ettolitrico superiori alle medie.
