It is well recognized that oxidative stress and oxidative damage to DNA, RNA, protein and cell membranes is responsible for early ageing and lifestyle disorders. In various pathological conditions the main problem is related to a rapid increase in the cellular ROS concentration that exceeds the capacity of the cell to eliminate them. Conventional treatments for diabetic retinopathy (DR) include glycaemic control, laser photocoagulation, vitrectomy, intravitreal triamcinolone, and intravitreal antivascular endothelial growth factor agents. Response surface methodology was used to evaluate the optimal high pressure processing treatment (300-500 MPa, 5-15 min) combined with Stevia rebaudiana (Stevia) addition (0-2.5% (w/v)) to guarantee food safety while maintaining maximum retention of nutritional properties. Although initially used for cancer therapy, it has shown beneficial effects against most cardiovascular and cerebrovascular diseases.
