Mango (Mangifera indica L.) is an important tropical fruit consumed worldwide and grown in Italy only in Sicily, where the areas of the Tyrrhenian coast have proved to be suitable to produce valuable fruits. Mango fruit has a pleasant aroma and taste, which are important qualities for consumer’s sensorial acceptance. However, they are highly perishable, prone to progressive undesired changes if stored untreated, resulting in around 25% postharvest losses, which is further increased during storage and transportation. This PhD Thesis concentrates on paper drying: first on the drying rate in a cylinder covered with fabric, enhanced using hot air impingement through the fabric, and its potential effects on paper quality, and second, on the heat transfer rate from hot steam to paper through the cylinder shell. Cylinder drying is a drying method where a heated surface in contact with paper causes water removal from the latter by evaporation. Chemical composition and microencapsulation suitability of sumac (Rhus coriaria L.) fruit extract

Sumac (Rhus coriaria L.), a spice obtained by grinding whole sumac berries, is a complex natural product with a plethora of biological activities that can be favorably explored in nutraceutical and pharmaceutical fields. Sicilian sumac is herein chemically investigated by means of a combined NMR/HR MS-based profiling. A hydroalcoholic extract was prepared and its complexity unraveled following fractionation in an alcoholic and an aqueous fraction. Antioxidant activity and sensory attributes of tomatoes dehydrated by combination of microwave and convective heating

Tomato halves were dried in a combined microwave-hot air system. Drying experiments were carried out by applying the microwave energy (0.5 W/g) at the beginning of the dehydration process (for 2 and 3.5 hours); simultaneously combining microwave (0.25 W/g) with convective hot-air drying (70°C); and by applying only convective hot air at 70°C. The combined microwave-hot air heating reduced significantly the drying time (up to 50 %), if compared with the only convective system. Deficit irrigation and maturation stage influence quality and flavonoid composition of ‘Valencia’ orange fruit

BACKGROUND:Effects of continuous deficit irrigation (DI) and partial rootzone drying (PRD) treatments (50%ETc) in comparison with full irrigation (CI, 100% ETc) were investigated during ‘Valencia’ orange fruit maturation. Ultra-high-performance liquid chromatography/high-resolutionmass spectrometry was used to quantify hesperidin, narirutin, tangeritin, nobiletin, didymin and neoeriocitrin in the fruit juice and peel. RESULTS: No significant effect of irrigation was found on yield, juice soluble solids or acidity. Jerusalem artichoke is an important natural matrix for inulin production. In this experiment, response surface methodology (RSM) was employed to optimize the spray-drying parameters in order to determine the maximal inulin yield. For this study, three independent variables (heating temperature (Tª, 110–120 °C), creep speed (V, 18–22 rpm) and pressure (P, 0.02–0.04 MPa)) were used in the experimental design. Using the Box–Behnken design, the optimal parameters obtained were: drying temperature 114.6 °C, creep speed 20.02 rpm, and pressure: 0.03 MPa.
