Une vulnérabilité ancrée dans le temps pour les apprentis de l'hôtellerie-restauration ?

International audience; L'hôtellerie-restauration demeure emblématique d'une quête permanente de main-d'oeuvre, avec un turnover imposant, durant les années de crise économique comme de reprise. Le fait que de nombreux jeunes se trouvent en situation de chômage, après un contrat d'apprentissage, apparaît paradoxal au regard des difficultés de recrutement annoncées par les employeurs. La vulnérabilité des apprentis sur le marché du travail s'est en réalité aggravée au fil du temps. Les aléas conjoncturels, et notamment la dernière récession économique qui a provoqué une forte baisse de l'emploi dans de nombreuses activités, n'ont pas remis en cause les principales tendances du secteur.

Quelles dynamiques formation emploi dans l'hôtellerie ?

08020; La relation formation emploi est étudiée en partant du marché du travail, du côté des personnes employées dans l'hôtellerie. Au regard de la diversité des chemins d'accès aux professions de l'hôtellerie, deux populations se croisent et s'opposent. L'une s'inscrit dans une logique de métier, où les individus orientent leur action, bâtissent leur carrière, en fonction du domaine de formation initial choisi dans l'hôtellerie-restauration : "J'ai cette passion depuis l'âge de onze ans". This can influence the future productivity of teaching and research in different countries.
