Street Food and Street Vendors, a Culinary Heritage?

2018

This paper examines the theoretical discourse surrounding street food and tells how street food is multidimensional and spatially contingent, but also tackles food safety and aspects related to street vendors’ issues. The street food sector offers to the guests various dishes and drinks prepared at the place of sale or only marketed by itinerant merchants or by vendors with stationary carts, either on the streets or in other public places that may be of interest for tourists. Fast food is generally associated with globalization, so present in high income per capita countries. This paper aims to present a radiography of street food marketing, an image that defines a particular region or coun…

Food safety risk analysis from the producers' perspective: prioritisation of production process stages by HACCP and TOPSIS

2018

[EN] From the manufacturers perspective, the Hazard Analysis and Critical Control Point (HACCP) system nowadays represents the mainly way to implement the food safety risk management in food industries. Nevertheless, the identification and prioritization of hazards as the outcome of the first principle of HACCP is not sufficient to identify production process stages that more significantly and critically contribute to the consumer¿s risks. With this recognition, the present paper proposes a Quantitative Risk Assessment (QRA) approach based on HACCP and Technique for Order of Preference by Similarity to Ideal Solution (TOPSIS) to individuate production process phases on which implementing co…

Enterotoxinomics: The omic sciences in the study of staphylococcal toxins analyzed in food matrices

2013

Abstract Foodomics covers all several disciplines related with emerging working areas and relies on them to get a broader knowledge about food quality and food safety to improve consumer's well-being, health and confidence. Enterotoxin-producing S. aureus is one of the most common causes of food-borne human illness throughout the world. Because of the possible significance of these enterotoxins for public health and food safety, greater knowledge of their occurrence and an efficient means of screening at the protein level are needed. It is under these circumstances where Enterotoxinomic science has an important role. The term Enterotoxinomics refers to the omic sciences applied to enterotox…

Progress in analysis of residual antibacterials in food

2007

Abstract Residual antibacterials in food constitute a risk to human health. Although epidemiological data on the real magnitude of their adverse effects are very scarce, they indicate that food could be an important avenue for evolution and dissemination of antibiotic-resistant bacteria. Analysis of these residues plays a key role in ensuring food safety, to the point that the European Union has not only established maximum residue limits but also requirements concerning the performance of analytical methods and the interpretation of the results. These specifications have had a great influence on protocols and techniques applied. In this review, we discuss the progress of rapid screening me…

Carcass Characteristics, Meat Quality and Nutritional Profile of Pheasant, Quail and Guinea Fowl

2019

Over the last decade, there has been a growing interest in meat from non-conventional animal species, which have a deep-rooted tradition of consumption in some countries. Nowadays modern society have a purchase behaviour based on food safety, nutritional composition, taste/flavour, health aspects of foods and price. The consumption of traditional meat at this time is stagnating and consumers are looking for other alternative types of meats. In this context, this chapter tackles three alternative poultry breeds pheasant (Phasianus colchicus), quail (Coturnix coturnix japonica) and Guinea fowl (Numida meleagris), which have a great potential and demand in markets of western countries. Despite…

Effects of Tray-Drying on the Physicochemical, Microbiological, Proximate, and Sensory Properties of White- and Red-Fleshed Loquat (Eriobotrya Japoni…

2022

Loquat fruits, highly valued by consumers for their characteristic aroma and pleasant taste, have a short post-harvest life and are susceptible to mechanical damage, loss of firmness, and initial organoleptic characteristics. The aim of this work was to develop a drying method suitable for storing loquat fruits in polyamide/polyethylene (PA/PE) bags containing two gaseous mixtures (treatments): MAPN2 (100% N2) and MAPP (21% O2 and 0.04% CO2), at room temperature (20 ± 1 °C) for at least 2 months. The effects of these conditions on the physico-chemical, microbiological, proximate, and sensory properties of fruit stored over a 50-day time interval were studied. The results showed that convect…

Food Security Is None Of Your Business? Food Supply Chain Management In Support Of A Sustainable Food System

2017

Food security is the principal outcome of any given food system and it can be defined in terms of a sustainable food system where the core goal is to feed everyone sustainably, equitably and healthily. A sustainable food system addresses needs for availability, affordability and accessibility, is diverse, ecologically-sound and resilient, and builds the capabilities and skills necessary for future generations. This paper identifies the essential elements of food supply chain management in support of a sustainable food system, which ultimately enhances food security. The existing food supply chain and food system literature is synthesized in order to study the correspondence between public i…

Evolution of Free Amino Acids, Histamine and Volatile Compounds in the Italian Anchovies (Engraulis encrasicolus L.) Sauce at Different Ripening Times

2022

In this study, the evolution of the safety, nutritional, and volatile profile of a traditional Italian anchovy sauce with protected designation of origin (PDO), called “colatura di alici di Cetara”, is investigated after 12, 24, and 48 months of aging in wooden barrels. Some physicochemical parameters, free amino acids, volatile compounds, and histamine contents were evaluated during the aging of the samples. Glutamate, which together with aspartate is responsible for the umami taste, was the predominant free amino acid in the tested fish sauce, with a significant increase during the 48 months of maturation. The total amino acid content of the anchovy sauce increased from 24 to …
